Not everyone is on the same page when it comes to understanding what DIM SUM 點心 actually are. Here's a quick DIM SUM break down from the video itself :
- Dim Sum, LEVEL 0 : If you know nothing about DIM SUM, just keep in mind that it’s these little steaming baskets, the bamboo steamers, in Chinese restaurants. ‘S all you need !
- Dim Sum, LEVEL 1 : DIM SUM are like small foods that are meant to go along with tea. In fact that’s how they were originally created in tea houses in south east China and Hong Kong. It’s a bit like SPANISH TAPAS who goes along drinks so well. And just like tapas they are meant to be shared.
- DIM SUM, level 2 : DIM SUM are a breakfast or brunch thing, not an evening thing. They can be served as early as 5am up to mid afternoon…
- DIM SUM LEVEL 3 : DIM SUM are not only steamed foods. They can be Baked, Braised, Fried, Steamed or even a combination of any of these methods. You officially graduated from DIM SUM UNIVERSITY.

Yes, also Alex has a lot of enthusiasm, love for cooking and acquired quite some in depth knowledge. (Like shown in the beef tar tar comment) Also his attitude is not of a critic, but someone who wants to discover the little perfectionistic things that make top level food so good. I'm sure it's a rewarding experience for these tip level cooks, like showing an respectful, eager, talented kid your craft.

Simple doesn't always mean easy. When you only had one or two elements to a dish the quality is very important. There is no hiding the flaws.

Dim sum is seriously one of the most undervalued foods out there. The amount of labour, care and skill that goes into each dish... And they're like 5 bucks a plate. Just insane.

Chinese food in general has such low expectations for price but the effort that goes into the dishes (non-fast food) and dim sum in particular are on levels you'd expect higher end French/Italian restaurants to operate at. But at the same time, it's a fraction of the price. People are willing to pay a premium for hand made pasta but few realize the effort to make dim sum requires so much more expertise and practice yet refuse to pay more than a few bucks per dish. Definitely some long-term cultural impacts in how people perceive foods and what is considered luxurious.

GOD.. As a Cantonese person, Chef Samuel Lee is sooooooooo cool and humble. Love the dynamic you two have. Also makes me feel so proud of our food. Samuel Lee is such a good ambassador for good Cantonese food.

Your expectations as Cantonese are very low as these are common dishes made with expensive or add-in ingredients than the norm. Wait... are you Cantonese from Hong Kong or Mainland China? BEFORE the turnover, Hong Kong served the best yet real Chinese food that could rival French Cooking. See Ang Lee's 1994 Eat Drink Man Woman (a visual example of what Chinese food SHOULD be).

​@@BelleLopez312 you'd be surprised - my grandparents left the mainland in the 1920s, went to Hong Kong, left HK in the 1930s, headed to England, and then to the US. I'm sure their recipes got bastardized a little bit over time, but "authentic" is difficult given how many people got scattered early on, and the influences on Chinese cuisine (even within china over its history) make it very difficult to categorize. My grandparents, for example, drew hard differences between their "traditional" dishes versus the "Hong Kong" style dishes that became popular later.

@@FireHawkISA If you know the old school, traditional dishes and ingredients then, it's easy to spot the Other Influences. For example, MONGOLIAN BEEF is definitely American as there is NO BROCCOLI in southeast Asia ever, AND that much beef into the dish is very expensive in a native country. CARNE ASADA and Burrito are also very Hecho en America.

@@BelleLopez312 well yeah of course, but that also goes for stuff like noodle choices and cooking styles. Calling Mongolian cooking styles "not Chinese" is kinda incorrect too, given that many other dynasties and heritages in China were minorities, and were given credit (maybe just in name) to styles of cooking they didn't have much to do with. The mongols were just another, albeit a close foreign power (kind of). Just saying, as Lee says, Dim Sum and fried rice are two dishes/styles of eating where creativity (and use of what you had) is part of the culture.

C'est Paris (sae paree) ! People wear what they want here these days. Some do trendy & trés chic, others do pajamas. There is dressing for the season, but generally no one gets terribly upset at dress codes.

I found this comment weird. Do you know how much effort Alex put out on his passions? It's his pursuit of perfection that attracts people with similar wills. Just look at the effort he puts in the name of all dishes. Do you think you can type out their Chinese names without making any mistakes?

That Char Siew bun is very very clever. It's a combination of traditional Hong Kong Polo Bun with it's sugary husk on the top mixed with a filling of char siew inside of it. Basically, it's 2 classic HK dishes in 1.

I luckily just finished eating or else this would have been torture since I love dumplings! I can relate to chef's guest being excited for the reopening as our favorite places were under lockdown, we sat at home missing their food and remembering our time there, hoping they would make it and that the lockdown would end. When we were able to go back and dine in, it felt like visiting friends you love and hadn't seen in a long time.

As a c-school project at Le Cordon Bleu, I “re-imagined” dim sum to create a dessert version using the same forms and cooking techniques (steamed, deep-fried, chilled) with different ingredients influenced by my life in Asia. Not all of them were sweet and there was a balance of flavors and textures - think roasted mango and caramelized onion siu mai in a pandan wrapper topped with toasted coconut flakes and a single crispy pork lardon. I’d love to see you do a series on creating your own expression of dim sum!

this post reminds me of that karen who “re-imagined” jook and dubbed herself Queen of Congee. you can call that a dumpling but those flavors are weird and it's no longer dim sum. it doesn't sound familiar at all and you imply you're elevating it which you're not. i think Alex has enough respect not to adulterate something people love and feel such passion for.

I'd love to see a dim sum series. Yes, some of the dishes and some of the dumpling folding techniques take a lot of practice to get right, and some ingredients can be hard to find if you don't have access to an Asian grocer. But there are also simpler ones that anyone with a bit of cooking experience can make. Siu mai, spring rolls and jiaozi/wor tip aka pot stickers are very easy, and the ingredients are easy to obtain. Steamed gai lan couldn't be simpler. Niu za or tripe might not be for everyone's tastes but I love it and it's easy to make if it doesn't gross you out. Salt and pepper squid is super easy and delicious. Pai gwat, steamed pork spareribs, is also easy if you can find doichi or fermented black beans. Fu pei guen, or beancurd skin rolls are a bit more involved but fun to make and one of my favourites. Cheung fun or rice noodle rolls are also fun to make, and there are many variations of filling. The one dish I probably wont make again despite also being one of my favourites is Phoenix Claws, or chicken feet. The process is so involved for such small results. I'd rather just go to a restaurant and order it. And they're just the ones that I've made so far - there are many more dishes that don't take years of technique to perfect.

I think Ha goa is easier to make than Siu Mai as you don't need to make it from scratch. With the Sui Mai the dough is only good if they make it themselves, and has never been my favorite.

Really enjoyed chef Lee in this and the last series. A master of his craft but humble, patient and polite. He's given a lot of time to you and I hope the exposure really helps, I'm sure it will. His reactions to your tasting were great and I'm sure he was over the moon at your ability to deconstruct the work that went into the food that perhaps many would miss. Alex videos are amazing. I had a smile on my face the whole time and also got really emotional hearing about how excited Chef Lee is to reopen. And even the little things are really funny to me. Like Alex riding up on his bike and parking right behind a super nice Porsche. Alex is so kinda, and passionate, and unapologetically Alex. Also please, if you live in Europe therapy is most likely free for you. If your parents are abusive you can also go to therapy without their acknowledgement or without them finding out. Don't fall for a scam that is aimed at leeching money out of people that are weak. There is help for you, but it is not in the form of betterhelp. Go to an actual therapist, they will help you.

Alex you've made me cry, i went to this same restaurant a few years back with my family and my brother, and its probably one of the most beautiful things i've ever done. Oh la la, Michelin-star Chinese food is the BEST! I still remember visiting Andrew Wong's restaurant in London back in 2016 (before they received their stars), and it was just an absolutely magical dinner! We didn't know what to order, so they decided to accomodate us with something akin an omakase experience, and me and all my friends sat there for 3 hours having the time of our lives. This video makes me super interested in visiting Paris and having a dinner or two at chef Lee's restaurant :D

Every video you produce Alex, transports me to another place and time, but more importantly, I am inspired. You don’t just make a video about this dish or that dish, call it perfect and then move on. You show us how to cook but, what you really do is take us on a journey. You show us why food is so important to the people and cultures it comes from, and you help us learn. You don’t rush. You take your time and tell us a story. In my honest opinion, you create the best content on RU-vid.

As chef Samuel Lee said at the end, go to Hong-Kong, and you'll have an incredible range of dim sum, along lots of other kinds of food.

Damn, I was really hoping this would become a Dim Sum series. But I get it, you really need to go to Hong Kong first to experience it. I have been to Hong Kong many times and it took some time for me to understand the magic of Dim Sum and meanwhile I make Dim Sum feasts at home for special occasions. The beauty of Dim sum in Hong Kong is that it is not luxury like it was shown here (altho this of course looked awsome) but affordable basic treats you can enjoy everywhere. Of course Tim Ho Wan is famose meanwhile, but there are also many more incredible places in Hong Kong to explore. Really hope that once travel to Asia will be possible again we will get our Dim Sum series from you :)

Holy f, I literally cried a bit when I saw the ruby dumbpling. That was one of the most beautiful pieces of food I've seen in my life. I might be overreacting here because I'm always emotional when it comes to art but I don't care lol. You can see how much love is behind that piece.

With the plethora offering by the world of dim sum, I would gauge a dimsum house on how well they make their siumai, hargao and charsiu bao…damn gonna order dim sum for breakfast later!

For me, it's how well they do their siu mai (always a staple), fung jao (chicken feet) and ngau yap (beef tripe). Also, by how long the line is to get in. :P

Made With Lau has a video on how to make siu mai. You just need the wrappers (can be found at many Asian stores) and some way to steam them (steamer attachment for a pot or rice cooker, bamboo steamer, steamer rack, or even just a plate in a wok surrounded by water).

I am missing dim sum so much. I used to live near Chinatown in New York City. Now I live in Tbilisi Georgia, and it so hard top find quality Chinese food. Merci for torturing me Alex!!

@@recoil53 I just had some Georgian Chinese food yesterday. Most of the "Chinese" restaurants have no Chinese staff. So it ends up being a sort Sino-Kartuli cuisine. (The Georgian word for their country is Sakartvelo.) This was actually tasty. But did NOT remind me of any specific Chinese style. And I used to live near Chinatown in New York. So yes indeed, "lacking" would be one way to describe it.
