I'd actually like to see what happens to the trimmed parts (like the end pieces of the loin)... Are they taste tested? Snack for the chef? Used in another preparation? Or (gasp! horrors!) tossed out?
Passion, yes definately. But... all that patting with bare hands... and honestly - Piercings? Watches? Rings? 🤢 I know plenty of fast food and street food places that take hygiene more seriously!
