If it makes you feel a little better, the added vitamins and minerals to flour is usually to make sure that those eating them don't become deficient. Those flours and other things, like cereal, are called fortified or enriched. Enriched flour came to be in the 1930's to help those struggling from the great depression to not become iron deficient. I am not saying that everything added to some flours are the best, but some additives are not for shelf-life.

Sadly the reason they have to add these things back in is because they are taken out during the processing to make the flour shelf stable. :( Instead of adding back in the bran, etc that has all of the good stuff, they make more money by selling it separately and adding vitamins.

Yes! Synthetic is not the same and is certainly not processed the same in our bodies. Also, they add huge amounts of gluten (way more than naturally occurs). It’s a wonder why so many are developing an intolerance.

A nurse friend told me that she learned that it was to help prevent a lot of deficiencies for people who were surviving solely on bread products. And goiters... preventing goiters.

Yes but the deficiencies were solely caused by the flour processing, removing the “good stuff” to make it shelf stable. Instead of putting it back in, they had already found a “niche” to sell the bran separately so they instead add synthetic to make up for it.

I normally never post stuff but as someone with multiple food allergies, I know that lactose allergy is not just tummy trouble. It can also be runny nose, extra mucus. You mentioned you switched Seth back to cow's milk, that might still be an issue. I truly have never commented on anyone's video but as someone who is allergic (not intolerant) to milk, eggs, chicken, and wheat those symptoms can appear to be a cold.

100% cold symptoms are for sure a sign of milk intolerance. The mucus then leads to eat infections and sinus infections.

Don't even have to have any intolerances or allergies for the mucus to happen. I never drink milk, if I have a cold.

This happens to me too! I had an awful time as a child with sinus infections and strep throat until I found out about my food allergies!

FYI - The vitamins added aren't to keep the flour from going bad, but to address vitamin & mineral deficiencies in the broader population. So some additives are for maintenance of population health & (at least in Australia) it is illegal to sell wheat flour WITHOUT those additives. I think folic acid/folate is one of those, precisely for the reason they are included prenatal multivitamins. Perhaps if you want to continue with the one ingredient rule those kinds of additives could be allowed :) Also, the flour you grind at home will be whole wheat, not white, & all whole wheat flour, whether milled at home or from the store, "should" be frozen because the fats in the germ of the wheat go rancid eventually, it's not just the lack of additives.

@@jessstewart5483 apologies. I may have bread & flour mixed up there. Regardless, the addition of vitamins (folate & thiamine) to bread products (whether to the flour or the bread during dough making) is a public nutrition strategy, not for a preservative action in the flour, so I wouldn't view it as an issue from a home bread-making point of view, to use flour with those ingredients, which everyone needs to get from what they eat anyway. Especially if the costs/effort involved in milling, storing & using the home milled flour is varstly outweighed by the enjoyment & convenience of using a very minimally processed product, such as flour. But it is everyone's choice to make about the ingredients they use, of course.

Our bodies are very efficient at get rid of excess nutrients. I am not aware of any evidence that shows that synthetic folate acts any differently in the body, than the naturally occurring substrate? I'm not a biochemist but I understand that the synthesized version of a vitamin/mineral is typically identical in form to its naturally occurring counterpart. In fact, the prevalence of neural tube defects significantly reduced after introduction of folate into the food system and recommendations to pregnant women to supplement with the synthesised versions. There is plenty of gluten sensitivity in Australia, & that sensitivity exists separate to fortified products.

I am not a biochemist but my understanding is that, in general, synthetic forms of vitamins are identical in molecular structure to their naturally occurring counterparts. In fact, the reality that neural tube defects significantly declined in the population after addition of folate to the food supply & specific supplementation of pregnant women with these synthesised versions, demonstrates the efficiency of synthetic folate to act "normally". Also, there is plenty of gluten sensitivity in the Australian population, separate to fortified food products & multi-vitamin taking. There may well be individual differences in how these synthetic vitamins are processed, but that needs to be determined on a case-by-case basis, not assumed of everyone & thus removed from everyone's diet "just in case" - the nutritional risks far outweigh the potential benefits.

I've spent an hour trying to figure out how to express how grateful I am for you and it's just impossible. YOU ARE AMAZING! So much info. I've been a live in caregiver for a couple in their 80's for 5 years. The one ingredient cooking is how they were raised. It took me months to get used to the change in diet! I'm so glad you're showing people this way of eating! I do agree it's more work.

We use a Mockmill, highly recommended it. The Mockmill is a stone mill vs the Nurtimill being an impact mill. It is much more quite and can produce everything from cracked grain to very fine flour. We buy our berries in bulk and store them in 5 galling buckets in our cold storage. We just mill the flour as need, we don’t store the flour. This makes the best baked goods and bread!

Our Latino family eats queso fresco crumbled on black beans, or sliced thin& cold and added to a hot tortilla with scrambled eggs with chorizo, onions, potatoes and peppers. Add avocado slices and sour cream for a healthy breakfast, brunch or dinner

Girl, as a fellow tired mom (and I ONLY have 5), chocolate and Diet Coke are my saving grace. I have had a Nutrimill for 15 years and love it! I will grind up my wheat (prefer hard white wheat) and keep it in the fridge until using it. It makes the best bread! I use about 1/2 WW and 1/2 white flour in other baked goods. Whole wheat is heavy. I love watching you and Solo. You are amazing!

I had lost over 80 pounds eating 1 ingredient food. Although I didn’t call it that. Everyone used to ask me what Diet I was on and I didn’t really know, I would just say the Diet from God. If he made it, I eat it. If he did not , I do not. (I didn’t eat any processed food, the hardest thing for me was salad dressing. I thought it would be bread but I was surprised it wasn’t) ok that’s not entirely true. I had a rule about CAKE 🧁 I would ALWAYS allow myself a tiny bit of Cake because I ❤️🧁 and if I didn’t, I would have thought about it the ENTIRE DAY 😂

Big hugs. My granny used to say as long as kids have clothes on their back, food in their belly and cuddles before bed everything is fine. Some weeks are hard. Here in Ireland we have3 rd lvl 5 lockdown We are allowed only 5 km from home, no household visit and no meetings. Most shops are closed and a lot of people work from home. Schools are also closed so we are doing some kind of mix of remote learning and homeschooling. There is just 3 of us and 2 cats but I also do meal prep without it I would be lost.

If you can’t find Parmesan crisps in the store, you can make them at home (they would still be one ingredient!) by baking cheese (Parmesan, cheddar, etc) on some parchment paper until crispy. There are lots of instructions online as it’s a fairly popular keto snack. It might even be cheaper to make at home, too! ☺️

@@charlottehodges7194 it’s so interesting to me to read these comments. I think the food culture here in France is so different. I can’t check the ingredients on my cheese because it’s just comes in white paper at the cheese shop. Although here is you buy Aop marked food, there are laws stating it can’t not change the traditional recipe therefore nothing extra (ie bad stuff) is added. Surely cheese is just unpasteurised milk and renit and salt depending on the cheese.

My mom and dad had a wheat grinder when I was a child (I'm 52 now). We had lots of food storage and Mom made whole wheat bread all the time. My sisters and I hated it growing up but now what I wouldn't give to have that freshly made bread! How our taste changes as we grow and mature. Mom loved our wheat grinder and it was a staple in our house. Such fond memories! 🧡

my grandma taught me many many years ago ( im only 59yrs lolol) but she taught me to always keep your flour in the freezer. i have always done that and have no problems with bugs at all. It's a great rule to follow.

I have ONE 13yr old son. Although some days he's like 5 with his ADHD! Lol but I totally understand how you're feeling. I'm amazed that you're always on top of so much! Constantly going and keeping everything and everyone together and under control! With just one kid, online school, work, life and a couple weeks away from turning 33 I feel like you were constantly! Especially lately! I've just been so run down, and tired. I just feel like I can't catch up on sleep or life! You can also cut the tortillas into strips and either air fry them,bake them or deep fry them and use them as salad toppings instead of bread croutons. I am gluten free and my husband uses the corn tortillas. He also cuts them into triangles and makes my chips. He seasons them with sea salt . Also he makes some with cinnamon and sugar so I can have a sweet treat. I hope everyone is doing well now. Stay safe and keep warm. I love your channel. Queso fresco means fresh cheese. Its a topping. Just use it on your tacos, its the authentic mexican cheese. You can also put it on your salad with no dressing.

Almost 30 years ago I bought a Kitchen Mill grain mill. I used it to make bread and other baked goodies with our own farm grown wheat. Now I've passed it on to my daughter and she's making her own pasta with the durum wheat her family grows. It became a legacy I never expected.

A hand crank grain mill was my Christmas gift, love it. I plan to get a Mockmill next. We order spelt and wheat grains from Azure Standard. Many of our bulk food comes from there now.

One of our favorite one ingredient snacks is a cut up apple, natural peanut butter and sunflower seeds. We sprinkle the sunflower seeds on the peanut butter and dip the apples in it...it has this salty sweet thing that we all love!!

We gave up all social media, in order to concentrate on our family and homeschooling for a little while to refocus on what's important! Food coops carry whole wheat berries/flour you can have ground there or are preground.

The vitamins in the flour is the same reason fluoride in water. So the general population has the nutrients that is needed. Just make sure it unbleached white flour is better for you.

I make my own vegetable stock with all of the peelings, ends, and skins, etc. from the vegetables with which I cook. I throw the peels, etc. into plastic containers or baggies and make a lot of stock when my supply gets big enough for a soup pot. It is very low salt. When I buy chicken, I buy it with the skins, and make chicken stock with any trimmings or skin I take off. If you cool it in the fridge you can take off the layer of fat that forms on top, so it’s low salt and low fat. You can put some vegetable peelings in the pot when you make meat stock, and it’s got extra flavor.

I’m Dutch and I find it so weird that even foods such as flour can contain up to 6 ingredients in the US, here in the Netherlands everything that should have just one ingredient has one ingredient. I think it’s very typical for the US 🤔

We have such a huge country and huge areas of food insecurity. We have to produce food that will not go badly as quickly and affordable. The Netherlands has 17 million people, the US has 330 million of which 34 million are living in poverty. And a great many more are close to the poverty line. The comparison doesn’t work. When given the choice, people want fresh food that is affordable. It’s just not often the case. So many Americans are feeding their families the absolute best foods that they can afford and have available to them and sometimes that looks like flour with six ingredients.

As someone who has worked in the food industry extensively, I just have to say that a lot of those ingredients especially in dry grain products like flour, rice, cereal etc. are actually just vitamins that are put in there to make sure people are not deficient. I believe those additions were started in the depression and WWI/WWII era. That is why you will often see the word “fortified” on bread packages and especially “enriched” on rice packages. Those vitamins are not to extend shelf life, although I’m sure there are many products that put extra stuff in to extend shelf life. Still a good thing to check your labels for added sugars and preservatives you may not want in your food though!

I used to have a Mormon family living next door to me, and they had buckets of wheat berries. The wife made fresh bread almost every day! I miss them 😭 You can also use wheat berries to make fresh sprouts and wheat grass

For the Mac and cheese..boil your noodles. Make your cheese sauce in another small pot..butter, little flour, milk. When it melts down then add to your hot pasta

When I was a teenager learning how to cook, I put a CUP of salt in mashed potatoes instead of a teaspoon or what ever it is. I will forget that. My mom tried sooo hard to eat it but she couldn't. Lol 😂😂

They have been bagging the bulk items so no worries re: COVID... Too bad you're not in Atlanta - we have the best indoor farmers market; no doubt their mung beans are inexpensive.

Ghana's is chocolate is great. My husband is from Ghana and we love Golden Tree cocoa powder. Ingredients: Natural cocoa powder. One item food but hard to find in the U.S. Makes great hot chocolate. We even had the chocolate bars at our wedding! For your gifts to our guest, we had the bride and groom a favorite candies. His were the Golden Tree chocolate bars and mine were Buckeye peanut butter candies since I'm from Ohio. Sarah there are low carb Buckeye recipes out there it only takes a few ingredients. With your kids baking skills, you could have the made up really quick(plus kids love rolling and dipping them)

It's true! As for as whole wheat flour goes -- grind as you go. Just grind what you need at a time. You can put extra in the fridge, but the most nutrition is when it is fresh.

The world is tired... I'm in Australia we are all TIRED! Everyone has Covid fatigue, no matter what your thoughts about it are. We spent 6 plus weeks in full lockdown in Melbourne, we are thankfully at 25 days with zero community cases, we have done VERY VERY well compared to many other countries, but we are all just exhausted! My grandma always made cornmeal tortillas when I was growing up. You make them with cornmeal, flour, salt, water and eggs. It’s a thin batter and you spread it out thin on a griddle, cook until they look dry on the top and then flip and cook for about 30 more seconds. They wouldn’t work for nachos but are really good for tacos! 1/2 cup cornmeal 1 cup flour 1 egg 1 tsp salt 1 1/2 cups cold water I hope this is a good option for you to use!

I dice garlic and put them in ice cube trays, fill with olive oil and freeze….after frozen, I put them in a freezer container and when I need some, I take it out..easy peasy…. I also chop up various fresh herbs from my garden, like rosemary, basil, etc and do the same as I do with the garlic…..

I am enjoying following along with this one ingredient food challenge. It really makes you think about what you’re putting in your body. Loved hearing the piano while you and Solo were cooking! My son has really taken an interest in it and he will usually be playing hymns while I’m cooking. It’s so relaxing ❤️

Queso fresco can be used in so many ways. You can crumble it in tacos, enchiladas, bean tostadas with all them cut up veggies you have, gorditas, and quesadillas. There are so many other ways you can use it also. The only thing with this cheese is that it won’t belt the way mozzarella will but is very delicious in the stuff I have mentioned
