It is cider time! I (Mike) made a hard cider with blueberries and we talk about his process and how it came out.
I had been pretty short on free time lately and my empty brewing gear was making me depressed. So I decided the best thing to try would be to whip together a cider recipe and to mix it up a little bit I decided to add 6 pounds of frozen blueberries to the ferment as well.
This Cider was 4.5 gallons of pressed apple juice (also called cider here in the States many times). I added 6 pounds of thawed out frozen blueberries as well. This brought the total volume in the fermentor to 5.5 gallons more or less. I added a little yeast nutrient and some Calcium Chloride to give me a final of 50 ppm calcium for the yeast. The yeast I pitched was Nottingham. This is a nice English style beer yeast that many report produces a great cider.
This cider has a great purple color from the blueberries. The nose and flavor was still decidedly apple but the blueberries gave it a little something extra that wasn't over the top blueberry but still something nice.
I am not a big fan of drinking hard cider, but this one I might indulge in from time to time because its a little different.

I always try to have a cider on tap for my wife and her friends. I have found Belle Saison yeast works really well. I like Nottingham and Cote de Blanc too.

Love the videos guys! Tis the season for a quick cider! Have you ever experimented with souring a cider? I was thinking a few ML of Lactic Acid might result in something interesting? Perhaps even back sweetening with tart cherry juice.

I just made a session mead in a half hour today cider and making can be done quickly with great results! OG 1040, really low in alcohol, I bottle carb it to champagne levels, really dry but still enjoyable

Ok enough!! I have seen several of these easy ciders recently!! I'm doing it!! Thanks guys!! 👍🍻 I think I want to do a little twist of my own.. One on one flavoring makes a sour green apple flavoring.. Hhhmm

Another really easy alternative to a full brew day is mead. A simple traditional, without hitting super high gravities, using decent honey and some good yeast can be made in under an hour, from start to pitched yeast in my experience. From there it's 4 feedings of Fermaid O, spaced about a day apart, and that's takes 5 minutes a day, and that's it. Then you can ferment and leave it for a month and you have a good mead. Short and simple.

I got interested in Cider last year and so I made 5 1 gallon batches with different yeasts in each. At some point I lost interest in them and they’re still sitting in 1 gallon glass carboys. Are they dumpers by now or can cider be aged? I have at minimum kept the airlocks full.

Hey, I just made this and was curious how long you let the cider and blueberries ferment before transferring it to the keg?

Until fermentation was complete. For me I let it sit for 3 weeks. -Mike

Can you use blueberry puree instead? I bought 1kg purée for 25L cider so I’m a bit worried I bought too much blueberry.

Of course you can use purees. It would be a little more efficient than whole blueberries but go for it. I don't think you can have too much blueberry if that's what you are going for. Cheers! -Mike

We're being cheeky. I enjoy a good cider no and again. But moreover I like making ciders because I like them dry and I can make it just the way I like it. Cheers! -Mike

Interesting idea. We have done a Smash with Mosaic and I've had several commercial examples with Mosaic. I think the reported blueberry aroma/flavor of Mosaic is lot dependent. On the homebrew front, I have yet to experience blueberry from that hop and I suspect the lot dependency is the issue. Commercial contracts might snatch up all the blueberry dominant lots before they get to the homebrew market? Maybe your experience is different. Cheers! -Mike

If you're just starting buy a gallon of great apple juice, pour some out to make headspace, add a pound of blueberries and yeast. Let it rip. Just focus on that fermentation process primarily. Give yourself a large enough container to ferment in if you don't use the original jug. Cheers! -Mike

What kind of yeast would u recommend and how long to let ferment?would u have to add sugar?

I enjoy making cider at home, my wife loves drinking the stuff and I have to admit, me too. I ferment 4l of fruit juice (ascorbic acid as preservative) at a time, using Lavlin D47 + fermaid K nutrient, the FG comes to 0.997 usually, its extremely dry. I then transfer to a party keg 5L (1gal) and dunk it in hot water to pasteurize it (60degC for 30min), killing off all the yeast. Add another 1l of the same juice, chill and force carb. Whats left is a very nice, not too sweet, fruity alcoholic beverage. I've used apple, red grape (my favorite), lychee (did not work that well, sulfur smell) and cranberry. Next up pomegranate then watermelon.
