One difference I've picked up is you used the same pastry for base and lid. In NZ bakeries it's common to use the same as yours for the base, but flaky pastry for the lid.
To be fair it should be a flaky puff pastry on top. And Ive never eaten a pie floating in mushie peas. Thats a very british thing. Not that its a bad thing it's just not a kiwi thing at all. Kinda like how the british put vinegar on their chips whereas kiwis put tomato sauce (red sauce) on ours. I've been living away from nz now for 7 years and a mince and cheese pie would have to be the one thing I miss the most about nz. However.. In the uk you can get the Pukka Pies, and they're actually very decent. The minced beef and onion is on point.
You've missed my aversion to puff/flaky pastry. Generally hate the stuff. Pies floating in mushy peas, deffo not a Brit thing. I think it's Oztralian and the peas are more like soup.
This aint AUSTRALIAN pie my friend....Its a Kiwi classic....When in Australia never found a pie thats as good as pie from New Zealand...lets talk real now ya...Mince and cheese pie , thai chicken pie, pepper steak pie, etc etc....BP gas stations make awesome ones .... dont know why and how ;) ..... Cant deny, they do look beautiful....now stuck in america and cant find anybody who can make a pie as good as this from east coast to west coast... I miss those pies :(
Hi, they're made/marketed by a company called Master Class. I can't find the exact model online, but this is very close: amzn.to/2sikOIv - difference is it has perforations which will probably let the pastry cook crispier. That's an affiliate link, BTW, so if you or anyone else uses it I get a few pennies.
passionfruitfruit Well I use it as a way to use up leftovers, so there are no right or wrong ways and it is very simple... If I have made a fairly firm spaghetti Bolognese sauce or a ragout then I will use that, otherwise I will just quickly pan fry some beef mince in a hot pan with some Olive oil, a tiny bit of Worcester Sauce, a tiny bit of whole grain mustard, some Oregano and some pepper. Be careful with salt though, because your cheese normally has a lot of salt. Fry it until just before it is cooked through, (remember, it still has to be grilled). Depending on how you like your toast (I like mine toasted on one side in a pan first), spoon the mince mixture onto your toast, add as much cheese as you like (I simply use a few slices of mature cheddar cheese) and place under a MEDIUM grill until all bubbly with golden spots on top.... Allow to cool slightly, and enjoy! :) Viel Spaß!
Only people who live in New Zealand knows what the recipe is because I have no clue what 500 grams is or liters are. I hope you have this recipe made for Americans because if not then we will have to look it up.
In the many years I have lived in New Zealand, I have only ever seen and eaten beef and cheese pies with chunky bits of meat. It is he best food for on the go or the morning after, especially when enjoyed with a bottle of L&P. The only shame is that most of the bakeries in NZ are Chinese now, so are the fruit and veg shops and the quality there leaves a lot to be desired... You basically have chunky beef precooked in gravy as a filling and a fat slab of cheese goes under the lid. You need to be careful, they are scorching hot when served.
What kind of cheese do you use? In NZ they use "Tasty" cheese which is some sort of white cheese but cannot find it in America. Is Provolone or Mozarella the same or do you a white cheddar? Please help!
It’s not all that common to have cheese in a meat pie, at least not in South Australia where I’m from... although the Pie Floater that you described IS a thing here in Adelaide... just not with the cheese. I hate to say in all my 40years I’ve never found the time to try it!
They are the most popular meat pie in NZ, can get em everywhere. I went to Aussie for a couple weeks in 2017, went into four bakeries total not one steak and cheese.
Made these yesterday and was so proud of myself! They looked just like your video and I made the same noises as you when I had my first bite. Lol. Granted, I think I watched the video over 20 times! Next time, I will add fresh chili peppers with the onions as the other Texan suggested...we like things spicy! Thanks for all your great videos Keef...I’m addicted to your channel and love your no-nonsense approach and sense of humor!
As an Englishman, I am very familiar with steak pies, steak and kidney pies, steak and onion pies, minced beef and potato pies, even cheese and onion pasties. I have NEVER heard of a beef and cheese pie, but these are going straight to the top of my ‘to do’ list.
NEVER apologize for your Aussie accent! Great looking recipe and video. Can't wait to try it. I grew up in Adelaide from ages 5 to 12 then moved back to the states. Lost my Aussie accent damn it. I remember pies like this and sausage rolls. People love when I make sausage rolls, but I want to add a pie to my list of nostalgic cooking. Can't wait to try this. Thank you.
it's funny but i've been living in Sydney for the past 10 years and one of the things I miss from home (NZ) is a good old mince and cheese pie. literally no cafe, bakery, sells them here, this is my experience. I enjoyed watching the video, especially some of the tricks you demonstrated, I can't wait to make some pies!
Join one of the 1.3 million Australians which holiday to New Zealand annually, the highest visiting statistics to visit NZ with China in second with 400,000.
When I went to school back in the 1950s a pie cart came out on a particular day to the school. The pie was topped with mushy green peas and black (Worcestershire Sauce) of asked for. NO tomato sauce ! BLACK sauce or nothing. The aroma of that black sauce on or in the pie was a pure delight.
As an Aussie i can say ive never really seen this type of pie before, though i wouldnt be shocked if its not made by any of the Harry de Wheels places. Im told they make very good mushy peas too
would that beef stock be OXO?? I found some OXO in PUBLIX a store in SW Florida.... still not found any REAL CHEESE here yet LARD well PORK FAT should be okay I used to eat these up North Like in Halifax circa1975-79 in the Pubs "aftertime" with Mushy Peas and another dish was a piece fish between two pieces of Potato covered in batter and deep fried. Ey By Gum.
All you need now is a brown paper bag to eat it out of while you're on your way to the beach for your lunch break, THATS Kiwi, and its how its meant to be eaten...followed shortly by a dooby......what was I talking about?
NO ..The Mince and Cheese meat pie is a classic New Zealand past time not Australian ... on any Street corner dairy/ Bakery in New Zealand you'll fine a typical mince and cheese or steak and cheese pie.. the commercial brand are Big Ben or Irvines
Just visited NZ and the pies were discovered after seeing them everywhere and wished we'd purchased more of them. Delish! The tomato sauce is disgustingly too sugary. But perhaps it's what kiwis were raised on. I preferred pies without that sweet stuff. We got 3 diff pies at one grocery store for breakfast. As we drove off gobbling the pies, we were uuhhhing and awwwwhing and slurping, then we tried the mussel meat pie...bad news! It was SO slimy fishy ...old fishy taste we were throwing up on the car rental. Had to roll down windows to get fresh air. These pies was still warmed from oven, so hot (old) fishy mussel pie, I would NOT recommend. EVER. :) All other meat pies: Lamb, Beef are yummy to the tummy!!!
@@michellepernula872 im from nz and prefer my pies without tomatoe sauce but instead with a cup of tea and dont really care if its aus or nz pie still damn good also you must try a hangi pie or watercress and pork pie delishes
There is no need to apologise for your Australian accent. Just like a British does not need to apologise for his English accent in America or Australia! More interested in your recipe.
Not tomato ketchup! Tomato sauce and fair dinkum....whoever thought of whacking a great big dollop of cheee in a pie? It'd have to be a KIWI. Certainly not an Aussie thing.
You need hot water to melt the lard. Otherwise you have to rub the fat into the flour and you get shortcrust pastry, not hot water pastry. Hot water pastry is a bit crunchier and harder than shortcrust.
Here in south Australia we have a few good old country style bakerys that make cheese pies and they are delishous. Thanks for making a Australian pie mate . Cheers
I live in QLD and when I visited NZ the pies reminded me, and were identical in quality and taste and variety, as South Oz bakeries....especially the country towns.
Unfortunately I can’t digest the fibre of onions so I can’t really follow your recipe exactly but if I can get my hands on some baby leeks as a substitute for the onions I will give them a go. If I try eating onions I usually end up walking around doubled up in pain. Don’t know why I can manage to eat leeks ( baby leeks) but I have been struggling with onions since childhood (63 next birthday), daft thing is that I enjoy the taste of onions as well as the aroma of them.
Oh my gosh. I have looked at so many videos today which made me hungry and this one is no exception... These look WONDERFUL. Thanks for sharing. Sandee
As I know usually to make short crust pie using cold water to mixed it and not boiling the lard, is it any difference using your method than using cold water to the result/texture of the base crust? Anyone can answer it? Sorry for my poor English..thank you
Alot of aussie pies have their cheese on the top of the pastry not inside the pie itself. Nz have the cheese inside the pie and its fucking devine!!!! A few other mentions are steak+cheese, bacon+egg, steak+cheese+bacon, cream chicken, steak+mushroom, chicken+feta, butter chicken, potato top, pork+watercress, and shitloads of other ranges.
Ok education on this. There are Kiwi pies (which the the delicious ones) and there are Australian pies (the dog meat garbage ones). Straight away you categorising th together means I wouldn't listen to your recipe lol
I am a 65yo Australian and I have never heard of a meat pie being made with cheeses in it. Yuk. The idea of it makes me feel sick. It probably stems from the American obsession with putting cheese into or on top of everything.
Homemade pies are awesome👍all made from scratch so foolproof anyone can make them. Try using lamb or chicken & vege too it's upto you But this recipe is great basis to start with great techniques & tips to learn. Enjoy the mouthwatering pie with some tomoto ketchup 😁
Just some minor changes that I think improve the dish slightly. Cut the onion thinner, thick chunks have a stronger flavour that can sometimes feel strange. Add the black pepper when sautéing the onion and make sure its freshly ground. Add the parsley once its all finished just before the final mix, adding fresh herbs too early removes the flavours. As well as flour, corn starch also works well in the beef mix. mixing a little mozzarella with cheddar makes it more stringy and makes it look really nice.
Thx Mate! 10 years ago i lived in roxburgh Central Otago nz next to Jimmys Pie Factory. I spend my hole Money for this pies. And back in Germany i Tried To copy this pies and it always went wrong!! They Never tastend like in NZ ..:( But your recipe Taste Like the pies in my Imagins :) thank you so much :)
I’m glad I’ve found this channel! I love the way you make your meat pies! 🥧😃🙌🏼 I’ve made the exact same pies for my family using this recipe & it was a hit! They LOVED IT!! Thank you for sharing. 🙏🏽🥰🫶
I'm a Kiwi and luv my pies, steak n cheese being my fav. I lived just out of cairns for 13yrs and no-one made a steak n cheese pie. In 2015 we did a 2week road trip and moved the family to Tasmania. From cairns to Melbourne no-one sold a steak and cheese pie. So I can safely say that no-one makes these pies in Australia, and if you do, you got it from us.
Well every bakery in Western Australia iv'e been to has them and has done for the 40+ years iv'e lived here. Cause traveling from Cairns to tassie is all of Australia......... :/
I ate a steak cheese pie in Brisbane yesterday and have eaten regularly in the years before. You need to go to individual bakeries that make their own.
Hi Keef from New Zealand. Steak and cheese pies are my favourite. We use flaky pastry for the best pies. I make them often and the delux versions have mushrooms in as well. After a lot of experimenting I discovered that the best pies have the meat cooked and cooled the day before. I use shin beef as it has a lot of taste as well as natural jelly which helps it set. I only use cornflour for thickening. Cut the tasty cheese into cm square chunks in the homemade pies
Keef I love the way you stack the pie tins and cut the edges. Genius! Always annoyed me trying to press the pastry right into the tins and having to trim the edges. Thanks for this advice!!
Yes Keef, the "Pie floater" Pie in pea soup was in Adelaide last I looked but "Pie and Peas"(mushy peas) was all over. The other difference I think is most ozzy pies use puff pastry (on top). Your take on this pie and cheese looks yummy, as does pretty much everything you make. Thanks Keef, keep you and yours safe, Cheers 🥧.
No pie floaters everywhere in Australia. Mainly South Australia. Also your filling is not enough and the tri Aussie pie is shortcrust bottom, flaky top - butter is better.
Id tou really want to make it aussie... add some vegemite to the filling while cooking. There a shop well 2 that sells pie floaties that has mushie peas with tomato sauce
Mince and Cheese Pies are actually more of a NZ favorite. Along with Sausage rolls and Bacon and egg pies. You'll struggle to find a bakery here in Australia that can bake any of these as good as our Kiwi bakeries. Some bakeries here in Brisbane don't even make mince and cheese pies... and some Aussies have never heard of that combination! I couldn't believe it as we grew up on them back home hehehe Kiwis love pies!! :)
Strangely, one of the people who told me this was typically Australian was a Kiwi, the other was Australian. Anyway, not here to argue about origins - it's delicious whoever invented it!
cheese, cheese and bacon, curry and plain pies are all staples in australian bakeries. i can't comment if kiwi's make better ones or not but i can say i've had some in aus that were perfection.
This is remind me of the Georgie Pie back in the 1990s in here New Zealand. Sadly the company got bank-rub. But the pie was so good. Now they have it at McDonald but it not the same anymore. Thanks for the video.
Yes, steak n cheese or mince n cheese are a NZ staple, so much that we have them on our McDonalds menu mcdonalds.co.nz/menu/georgie-pie-steak-mince-n-cheese-pie. Living in Aus for over a decade, they are available but not as common. Aussies prefer a chicken schnitzel "sanga".
Mince meat, bacon and cheese pies, my favourite, for over 25 years, family made but also at times bought from the same local Aussie cake and pie shop that sells a wide variety of different pie fillings. Actually just ask for cheese and bacon, it’s accepted there will be great meat and gravy in it as well.😂. Personally, just my preference, but I never use tomato sauce when I have pies but that’s just because these great cheese and bacon need no other help to be yummy for my taste. On occasions my daughter makes a very similar recipe as yours only additions are Worcestershire sauce, and sometimes bacon, in any case, always a great excuse for an extra visit to her home for lunch on her pie making days.
@MrsBossyBoots indeed. I don't need to edit this video, it's a talking point, and the discussion is going on here in these comments. Many people seem to be enjoying it.
Why are you making pies at all, thought you were into fried chicken? pahahahahahaha... ok sorry :-\ strarlians must be a bit radged mind putting cheese in a pie :-|
