Mineral oil doesn’t “evaporate.” It gets soaked into the outer layer of the stone. Where the stone is softer and has more talcum, it soaks in more.

can you get soapstone in an extremely high polish state?

If you need to leave the stone after oiling for a few days, how can you use the kitchen counters during that time?

You don’t have to leave it. You can use the countertop right after you wipe off the excess oil.

Can not get my soapstone countertop to shine any ideas.

It’s not a stone that can be shined like granite. When oiled, it’s initially shiny and then becomes matte.
