This isn't how an actual pepperoni is made, you added sodium nitrate which is a preservative so this product is most likely not what a quality pepperoni

Its nitrate for this amount of time and temp. Nitrate will convert to nitrite given time and conditions and here as an example. For the product being in med temps for as long as they describe, nitrate would be used especially with the use of cultures to add flavor to the product. Smoke considered and smoked and then aged again as mentioned. They mention flavor and this is key for this product. #2 is my bet.
