I'm BooneBake.
Today I made a beautiful mini strawberry cake using strawberries as the main ingredient.
Since it was a strawberry cake, I made it in the shape of a strawberry and it turned out so dainty and cute.
It's a visual that anyone will fall in love with if they actually see it.
I used modeling chocolate to represent strawberry leaves.
Modeling chocolate, also called plastic chocolate, has simple ingredients and is easy to make.
However, the texture is very different from modeling chocolate made with dark chocolate, so I recorded it in detail in the video, so please watch it closely.
Modeling chocolate made from white chocolate has a high cacao butter content, so the cacao butter must be carefully removed.
You can store it at room temperature for a day before using it, or store it in the refrigerator for a few hours before using it.
When the weather is hot, it is best to place it in the refrigerator before use.
I tried using strawberry cream in tiramisu.
It's so delicious that I'm very satisfied. 😄

237ml = 1 cup
15ml = 1Tbsp
5ml=1tsp
1 egg (53 g without shell)
Heavy cream (38% milk fat)
(Chocolate is chopped, flour is before sifting)

● Strawberry insert jelly
45g water
15g sugar
1 tsp lemon juice
3g powdered gelatin
15g water
70g strawberry puree
food coloring (optional)
● Modeling chocolate (plastic chocolate)
100g white chocolate (couverture)
33g starch syrup
fat-soluble food coloring
(If you use water-soluble food coloring, mix it with starch syrup.)
● Strawberry Tiramisu Mousse Cream
(Mold size: 4.5cm, sphere shape, 12 pieces)
2 yolks
25g sugar
25g water
85g white chocolate
55g strawberry puree
25g raspberry puree
6g powdered gelatin
30g water
180g heavy cream
125g mascarpone
● Tart substitute cookies
(Mold size: 5.5cm (sphere) *12 pieces)
