MOCK CHOPPED LIVER created by Kendon Alfond and slightly modified by Sherry Shrallow Ingredients: ¼ cup vegetable broth ½ cup chopped onion 2 cloves garlic, minced 2 cups chopped mushrooms ½ cup walnuts ½ teaspoon sea salt ¼ teaspoon tarragon 1 teaspoon balsamic vinegar Black pepper to taste Fresh parsley or dried parsley for garnish Directions: 1. Sautee onion and garlic together with the vegetable broth for about 5 minutes 2. Add mushrooms and cook until soft 3. Add cooked ingredients to a food processor 4. Add in rest of ingredients 5. Blend until smooth Serve with celery sticks or crackers as a delicious appetizer.
As a child, my grandfather brought over a big spread of food every Sunday morning and it included chopped liver, but I was never a fan! This version looks so good and I’ll make it after my few months off of nuts. Thanks for sharing!
