In France the cake I miss most is the strawberry shortcake. Having said that, you can get your hands on strawberries pretty much everywhere. So let's enjoy this japanese shortcake at home! Give it a try!

Ingredients (in a 15cm cake mold) :
3 eggs
10g unsalted butter
15g heavy cream
70g cake flour
80g sugar
5 to 6g glucose syrup
380g heavy cream
38g sugar
1 tsp cremfix (if your cream has less than 35% fat)
For the syrup
2 tbsp sugar + 2 tbsp water
