🍳 PROCEDURE 🍳
00:00 - Let's start with the hazelnut base: work the soft butter and half the sugar in the planetary mixer, then add the yolks to obtain a light and frothy mixture.
00:40 - Beat the egg whites until stiff, add the remaining sugar and fold them into the butter and yolk mixture. We sift the flour, baking powder and starch, add a pinch of salt and the hazelnut flour.
01:57 - Pour everything into a 24 cm cake tin and bake at 180° for 40-45 minutes.
02:28 - For the cream, let's mix egg yolks, granulated sugar and starches. In a saucepan, heat the milk, cream, coffee and vanilla, then pour over the yolks. Cook over low heat until the cream thickens. Let it cool to room temperature and add the soft butter.
05-06 - Now let's assemble the cake: cut the base in half, soak it with the coffee and sugar syrup and fill it with the cream. Cover the cake with the remaining cream, decorate with flakes of dark chocolate and tufts of cream, and finally add coffee bean-shaped chocolates.
