For the apricot dumplings:
9-12 apricots
9-12 sugar cubes
500g quark
160g butter 🧈
2 eggs 🥚
250g flour
50g semolina
40g sugar
1/2 vanilla bean

120g butter
120g breadcrumbs
40g sugar
Preparation:
Wash the apricots, halve them, and remove the pits. Place a sugar cube in each apricot and close them well.
For the dough, knead together quark, butter, eggs, flour, semolina, sugar, vanilla bean seeds, and lemon zest into a smooth dough. Let the dough rest for a bit.
Form small portions of the dough and wrap each apricot to form a dumpling, ensuring the apricots are well sealed.
Bring salted water to a boil in a large pot. Carefully add the dumplings to the boiling water and reduce the heat, letting them simmer for about 12-15 minutes until they rise to the surface.
Meanwhile, for the cinnamon breadcrumbs, melt the butter in a pan. Add the breadcrumbs and sugar and roast until golden brown, stirring constantly.
Carefully remove the cooked dumplings from the water with a slotted spoon, drain them, and roll them in the cinnamon breadcrumbs until they are fully coated.
Arrange the apricot dumplings on plates and sprinkle with additional cinnamon breadcrumbs.
