▷Ingredients:
■Coffee mille crepe dough
2 whole eggs
35 g unsalted butter, melted
35 g sugar
75g cake flour
250 ml milk
4 g instant coffee
5ml rum (option)
■Whipping cream
300 ml heavy cream
15 g sugar
■Chestnut cream
240 g chestnut paste
100 ml heavy cream
▷How to make:
1. Add melted unsalted butter, sugar and flour (sifted) to the whole egg mixture and mix well.
2. Dissolve instant coffee in milk, add to ① and mix. Strain so that no lumps remain in the dough, add rum and refrigerate for 1 hour or until chilled.
3. Mix mille crepe batter to make it uniform. Heat a frying pan, lightly oil it, roll out the dough and bake it on both sides. 10 to 12 pieces can be baked.
4. Cut the baked dough into 15 cm dia. pieces.
5. Add the sugar and vanilla extract to the cream and whip to a stiff consistency for easy application while chilling in ice water.
6. Add the cream to the chestnut paste a little at a time and mix.
7. Spread 30 to 35g of the whipped cream over the mille crepe pastry. Spread 35 to 40g of the chestnut cream, and then add another layer of mille crepe pastry. Alternate layers, and finally spread a thin layer of whipped cream over the entire surface.
8. Put the extra chestnut
