Moros y Cristianos [Arroz Congri]

Moros y Cristianos is how we call it in Puerto Rico. Most Cubans where this meal originated call it arroz congri. The first time I tried it was in Puerto Rico where I watched my best friend’s mom cooking this meal. Both left Cuba back in the 1980s.
This rice I cook it somewhat different than my other rices and the technique I approach ensures the rice is nice and grainy. I choose dried beans instead of canned for this meal.
