I don't understand why people are getting touchy about the camera man joking with Hiroyuki about him having OCD. He is friends with Hiroyuki and has the right to joke around with him and whether Hiroyuki took offense or not is between them. I didn't detect any malice in the joke. How you gonna tell two people that probably were friends long before they started this channel, how to joke around with each other. Japanese is absolutely a different culture so I can imagine Hiroyuki would take offense if he feels that the camera man is trying to say something is wrong with him, but nevertheless they are still friends. I say they should joke around a little more, put some humor into the channel. Keep it up you two! I love your videos!
Thank you for your comment...no one here was making fun of anyone with OCD....we were just pointing out the people who need to be organized and must be this way to feel satisfaction.

Exactly my dad was a maintenance man for a semi truck manufacturer and his tool room was laid out in a certain manner to best suit his work and his tool room at home was laid out in a certain manner and if I moved a screw driver out of place he knew it within 30sec of walking in the tool room I used to move small things just to mess with him and every time just a few seconds he would see it I wish I could post a picture on here I have a picture of my stand up tool box drawers so my dads “ocd” carried over LOL all the sockets ratchets this that and the other all in there place and nice and neat and I know if my 10mm socket is upside down or gone LOL 😂
The way he is gently placing the ingredients into the pit reminds me of sukiyaki. My state, Oregon, is on fire right now and I could really go for a comfort food like sukiyaki. It's good for the mind, body, and soul.
Hiro can succeed on youtube alone and not vice versa. The cameraman is quite annoying. It would be awesome if Hiro put all his efforts on his other channel Hiros Day off!

it’s not really OCD , if im gonna be honest . it’s just that Japanese people are very clean . i believe growing up their parents teach them to always be clean whether it’s to keep yourself clean , or your home or while you cook . just like all of us . 🤷♀️🤷♀️ but love the food n’ the cooking tho . 👏
Its culturally ingrained into their societal norms(being organized). I lived there for ten years and everything they do is super organized. Even the manner in which trash is thrown away, sorted and bagged.

Yeah, I completely agree. There are things that he does that makes me cringe like leaving the the little piece of root on the cutting board. But the joking around about OCD is not one of them. Just thinking about the piece of the root bugs me.
i didnt expect this presentation. im used to eating salmon head miso soup.. but this presentation is amazing. and elevated the dish to a level i never thought of. the butter at the end is the icing on the cake. lols
I lived in Japan for 5 years...i called it the land "where all things considered"...ocd is not even close to how meticulous the culture is...esp.the food...what an inspiration...and i have all 95% of the ingredients of this dish in my kitchen right now.
Made this dish last night. Used a slowcooker instead because i missed making it for dinnertime. Had it today and oh my goodness, is it the best miso soup ive ever had. So umami
It totally could be a meal. On my budget...it is definitely a meal!!! He teases him on OCD, but I think it is more a tribute to the importance of presentation. Which is why his friend video records and the Chef makes it look GOOD! In some ways for a chef, I think presentation is everything!!! Also, it's just simply pleasing to the eye, and everything looks clean and like a work of art...just like his kitchen...I want to cook in that kitchen!
Agree, this is not OCD, I have seen hotpots in Japan everywhere and they all looked like this, very nice presented and arranged for the eye. Also having a clean kitchen is normal, a messy one is the issue!
this is amazing Hiro! This is a great way to to show non-sushi Japanese style cooking and how it Japanese cooking develops all those umami flavors. I had haphazardly tried making my own miso nabe in the past and could never get it right especially with stacking the veggies and not blanching the proteins to remove the scum and also not adding the mirin. Can you show us how to make something with a shoyu base next time? A yosenabe or a buta hakusai nabe?

We live In Camano Island so my husband caught some salmon .I usually cooked the head follow my Mom way that Vietnamese way & we call salmon soured soup ( canh chua ) ,,I saw you ate the best part of it ,,I will try soon,Thanks a lot 👍🥰🙏🏻

As someone who suffers from real (luckily mild) OCD, I want to point out there is a huge difference between OCD and just being organized. OCD can be crippling and you are unable to function until something is completed to perfection.

I would love to try this but my version wouldn't be so orderly and picture perfect. But that's the Japanese aesthetics and I'm not complaining. There is beauty in orderliness. It looks really, really yummy. I could eat this everyday for the rest of my life.
When you cook for someone you are giving them the best your hands have to offer. Your workspace cannot be cluttered or you might mentally bring that disorganization to the person you are serving, (it is said that bad spirits like disorganization). Cooking with your hands you give nourishment to that person, good things for the soul to wish that person happy. You can see that in Mr Hiro’s work. His teacher must of been a great person.
i do not believe Hiro has OCD, I do believe he takes great pride in how things look and his food and there is nothing wrong with that. I also believe that the camera man was just poking fun at Hiro, I think that is great too, shows how good of friends they are. I think the best chefs throughout the world know basic cleaning and organizing skills. I don't consider it to be ocd, that is just ridiculous to assume someone has it because they are organized. Although some may have it, I wouldn't assume things. Hiro is an awesome sushi chef and his way of cooking is on another level🔥 Ps. I'm just saying, not a hate comment on the cameraman 😅 They always kid around with each other and I love their content, keep it up you guys! 🙌
My take on OCD Organized- - It made easier for me to find what I wanted to find Clean- - A good habit that I really appreciate, especially during this Pandemic time Decorative- - Still working on that... But it really is a pleasant enjoyment to watch Chef preparing these dishes, it has a Zen feel to it. 👍
I've been to ishikari, spent a day at the beach there during our trip to Hokkaido. I had no idea they were famous for this dish. Sad i didnt get to try it. Guess will just have to follow chef hiro's recipe and make it at home

A person who is organized doesn’t have an OCD issues. Hiroyuki is a professional chef who knows how to make his job easier. The cameraman, on the other hand, is ignorant.

Hiro I made the nabe tonight and it was super oishii! I had most of the ingredients already including Trader Joe's salmon. I only ran down the street to buy daikon and shimeji. I don't shinguku so I just placed an extra bunch of negi on top. No substitute dry chinese shitake for fresh. I didn't use enough bonito and kombu but next time I will use more. I had Yukon gold potatoes sitting around I this I'm sure taste better than russets you used. The potatoes were the tastiest thing in the pot as it absorbs all the flavor of everything else. I didn't have salmon head but I'm sure if I did it would taste even better. Lastly I didn't have any cold beer to go with it. Next time I will. This was an excellent dish and easy to make. Your vegetable stacking technique made it easy to arrange and looked great. I had previously struggled to make my own nabe in the past but now I have learned a little bit more. Thank you Hiro!
Thank you for watching and making at home too! salmon head has many great parts so the taste and the meat is more fatty, not so dry like regular salmon meat, but you can get some belly and wow, maybe even better! Sounds like you didn't have tofu but make to to add also...so good :)
