For "Mother's Day Dinner" Part II, we bring you Crab Salad Lettuce Wraps. This salad brings you a mouthful of spring. It's very easy to make, only takes about 15mins. Creamy avocado with sweet crab meat is a great combo already, when paired with ginger and citrus juice, the freshness gets enhanced dramatically. It's rich but the same time refresh and juicy.
Gingery vinegar is always paired with seafood. It brings out the freshness and suppress the fishy smell. In holistic Chinese medicine, we believe crabmeat is very cold to the human body and ginger is very warm. By eating them together, we create a balanced environment in your stomach.
INGREDIENT:
Butter lettuce
8oz Dungeness/blue crab meat
2 medium size fuji apples
1 large avocado
2 ribs of celery
Lemon
Orange
Ginger
Chives
Mayo
Ginger dressing:
4 tbsp mayo
2 tsp finely minced ginger
2 tbsp fresh orange juice
1/2 tbsp lemon juice
Salt and Pepper
3g minced chives
