Ingredients:
Mutton Marinate
1 kg mutton
1 tbsp ghee
1 ½ tsp salt
½ cup yogurt
1 tsp sugar
1 tsp poppy seed paste
1 tbsp cashew paste
1 tbsp ginger paste
½ tbsp garlic paste
½ tsp turmeric
1 tsp coriander
1 tsp salt
½ tsp pepper
Gravy
¼ cup cooking oil
1 cup onion
2 small cinnamon sticks
7 cloves
5 cardamom
2 bay leaves
½ tsp shah jeera
1/2 cup water
8-10 golden raisin
½ tsp nutmeg
½ tsp mace
4-5 green chilies
2 tbsp cream
1 tsp kewra water
2 tbsp fried onions
Instructions:
1. Mix mutton with ghee, salt, yogurt with sugar, poppy seed paste, cashew paste, ginger paste, and garlic paste
2. Add turmeric, coriander, salt, and pepper
3. Let the mutton marinate for 1 hour
4. In a large pot, add cooking oil along with sliced onions
5. Stir in cinnamon sticks, cloves, cardamom, bay leaves, and shah jeera
6. Add the marinated mutton in to the pot
7. Mix well and add golden raisin, nutmeg, and mace
8. Cook until soft for 1 hour approximately on low heat
9. Remove lid and add fresh green chilies
10. Pour cream and kewra water
11. Garnish with fried onions
12. Ready to enjoy!
