Let's learn how to make delicious mumallaengi-muchim today! It's a Korean banchan (side dish) that's very common in a Korean doshirak (lunch box). The main ingredient is mumallaengi - Korean white radishes, cut into pices 3-4 inch long and 1/4 inch thick and dried in the sun. You can buy packaged mumallaengi in Korean grocery stores.
A few tips for this banchan: don't soak it in water too long, because the radish will lose it's delicious flavor. 7 to 8 minutes is perfect. Don't forget to wash and rinse the radish a couple of times to remove any remaining dirt and to make the radish a little softer.
Another tip, as you see in my video, is to stir-fry it with vegetable oil for 1 minute so that it gets more plump and keeps its beautiful red color and springy texture.

Ingredients:
5 ounces mumallaengi (dried radish strips), about 3½ cups
1 teaspoon vegetable oil
3 garlic cloves, minced
2 green onions, chopped
2 tablespoons fish sauce
3 tablespoons hot pepper flakes
3 tablespoons rice syrup
2 teaspoons sesame seeds

So I'm here because at the korean mart in my town they had this and I didn't know what it was. Well needless to say I bought it and fell in love with it. Literally just at it with rice, only because i felt it was a little too weird to eat it by it's self. 😂

It's black sweet rice. Check out the photo in the ingredient section on my website, please. When you make rice, just add 1 spoon black rice, then the rice will turn out beautiful purple color when cooked.

You always amaze me. Maangchi, I luv Korean, Thai and believe you me, did not know James Strange watches you recipes too as well as Dave and a few others. 무말랭이를 좋아해서 수많은 레시피를 보고 따라했지만 매번 실패했었어요 망치님 레시피엔 흔히들 넣는 찹쌀풀도 없고 무말랭이를 볶으시길래 놀랐는데 역시 그대로 따라했더니 정말 맛있게 잘되었어요 ㅠㅠ어쩜 이리 꼬들꼬들하게 맛있죠 처음으로 성공하는 무말랭이랍니다 ㅠ_ㅠ저는 평생을 반찬집 무말랭이만 먹어서..헤헤 좀더 양념이 강했으면 했어요 그래서 액젓1.5조청3 정도 추가하며 조정했어요 잘 만들어져서 정말 너무 기뻐요 망치님이 최고에요 ㅇㅅ

i think nuoc mam is fish sauce that is diluted and seasoned. my mom always diluted fish sauce with water and added garlic, lemon, chili peppers, and a small amount of sugar. i'm not sure about the crab thing, but three crabs is her favorite brand :)

Maangchi, you look gorgeous! I love the look! So now that we know what mu is and what mallaengi is, what does muchim mean? i notice it is part of the name of my beloved dried squid salad too. So... I'm like, what am I going to cook for dinner today? I've been cooking American food lately thanks to our recent cable subscription and watching cooking shows - currently, The Barefoot Contessa (Ina Garten is my favorite) but our family, being Korean American, I need to cook some Korean so my husband can get his kimchi fix.
