Ingredients:
• Oil: 3-4 tsp
• Whole garam masala (cardamom, cinnamon, clove): a few pieces of each
• Cumin: 1/2 tsp
• Hing (asafoetida): 1/2 tsp
• Onion: 1 medium, finely chopped
• Ginger garlic paste: 1/2 tsp
• Salt: 1 tsp (adjust to taste)
• Red chili powder: 1 tsp (adjust to taste)
• Turmeric powder: 1/2 tsp
• Coriander powder: 1 tsp
• Cashew paste: 2-3 tsp
• Mushrooms: 2 cups, cleaned and sliced
• Milk: 1 cup
• Garam masala powder: 1/4 tsp
• Fresh coriander leaves: a handful, chopped
Instructions:
1. Heat oil in a pan and add the whole garam masala (cardamom, cinnamon, clove) along with cumin seeds. Saute until they release the aroma.
2. Add hing (asafoetida) and chopped onions. Fry the onions until they turn semi-brown.
3. Add ginger garlic paste and sauté for a minute until the raw smell disappears.
4. Now add salt, red chili powder, turmeric powder, coriander powder, and cashew paste. Mix well and fry for a couple of minutes.
5. Add sliced mushrooms to the pan and stir-fry for a few minutes until they are slightly cooked.
6. Cover the pan and let the mushrooms cook on low flame for about 3-4 minutes until they are tender.
7. Pour in the milk and stir well to combine all the ingredients. Cook for another 2-3 minutes, allowing the flavors to blend.
8. Sprinkle garam masala powder and chopped coriander leaves over the curry. Mix gently.
9. Turn off the heat and let the curry rest for a few minutes before serving.
10. Serve the creamy mushroom curry hot with steamed rice or roti.
