Hiya Baya! I enjoyed your battle with the giant while you were surrounded by rats! It's not helpful to know now but the rats are definitely not infinitely respawning, even when the giant is alive. They'd have eventually stopped appearing. The 'different' spitting Mimic that you encountered in the tunnels with the frogs and the rats is a Dark Souls 2 style mimic! That's how they all walked around in DS2, doing their weird upside-down crab walk. And the dead NPC that you encountered next to the Profaned Capital bonfire is also a minor character from Dark Souls 2. I love Karla's hat on my characters. I think it looks pretty sharp when matched with many armor sets.

You could always come back to this area later if it's too hard. You can't explore thoroughly when you have to run away from all the enemies instead of killing them.
