Roghan Josh is prepared in 2 different ways. The Kashmiri Pandits do not use onions or garlic. The Kashmiri Muslims do use onions. But both use Asafoetida, which is the key ingredient and imparts a unique flavor. The recipe shown in the video above is not Roghan Josh by any stretch of imagination; its just common mutton curry, sorry to say.
@@Rand2015 Rogan Josh: Serving size:2-4 people NOTE: DO NOT PRESSURE COOK. Ingredients: • ½ kg (lamb or goat, preferably leg meat), • 1tsp red Kashmiri chili powder, • ½ tsp ginger powder, • ½ fennel powder, • 3 cloves/laung, • 1 tsp zeera/cumin seed, • ½ powdered cinnamon /dalchini), • pinch of heeng/aesofoetida, • 2 tbsp yogurt, • 2 big black elaichi/cardamom, • 2 small green elaichi/cardamom, • 3 tbsp. of mustard oil, • Salt to taste. Method: Wash meat and keep in colander till the water drains. Heat mustard oil in a deep pan/handi/Utensil. Add heeng (Asafetida) to oil. Add meat and stir-fry well. Add clove, cinnamon, powdered black elaichi, zeera. Stir-fry till color of meat turns light brown. Add red chili powder, and yogurt. Fry again till no white color of yogurt is visible. Add ginger powder, fennel powder , salt and ½ cup of water. Cook for 30-45 minutes or untill meat is tender. Check for the desired tenderness. If you see excess water, boil till desired consistency is reached. Grind zeera and green small elaichi and sprinkle on meat and cover. This will give exotic aroma to meat. • Serve this dish with white rice
I had prepared Rogan josh the way he said.and trust me it was made exotic,amazing.sandeep sir ur to too good with cooking.i don't know if it called rogan josh or whatever but the taste was mind blowing.
Wonderful recipe. Reminds me of how my uncle makes mutton. Came out with perfect consistency and colour ( used degi Mirch for coloring) Would look forward to more chicken and mutton recipes.
With Due respect Sandeep bhai, please correct me if I m wrong. I strongly believe that tomato is part of Rogan Josh, Kashmiri Lal Mirch Raw is. BTW, even I m Sandeep 🙋
No asafetida no ginger powder no ghee ...but tomatoes onions and garlic 😦please don’t call this recipe as rogan josh this could be any thing but not rogan josh atall naaaa
In authentic Rogan Josh onion, ginger & garlic is not used. Hing, dry ginger Kashmiri red chilli powder, garam masala & fennel seed powder is used. This recipe is not of Kashmiri Rogan Josh.
Chef u r making kashmiri rogonjosh wrong cooking tomoto nd onionis not used in rogonjoshnor garlic is used in it i am kashmiri pandit pl do't call it rogonjosh.
Sandeep bhai ap ne Ye jo recepy banaye ho Es me turmeric powder ka use Kyu nhi kiya.... Turmeric se khushbu or test bad jata hai.. Or grebi ka color or bhi acha ata hai.. Plz reply
Sir what about kaju paste or badaam paste to make rogan josh isn't it essential pls know us.....thanks to share such a great home-made receipt I will definitely try this at my home..
Ok , first it’s completely wrong that if u stir the onions continuously it won’t cook. Secondly, this not Mutton Rogan Josh Recipe....u need to learn first before making a video
It would have been good if you had mentioned how many (numbers) of the ingredients go into rogan josh. It would have helped. Preparing by just seeing the video is a bit difficult.
