In this video, I talk (ramble?) about how I went from point A (don't start there!) to where I am now in my "BBQ journey". I also offer some thoughts as to what I'd do differently and some opinions on the type of cooker I'd start with if I were to begin the "journey" again!

Agree 100% WSM. My first bullet smoker was a cheapo bullet smoker I got for "free" ironically when I was smoking (Marlboro miles). Didn't realize how much of a struggle CHEAP was until I got the WSM. I would add for those starting out: Remote digital temperature probe (if you can afford it) and/or a instant read thermometer. Your BBQ will be 75% better if you simply cook it at/to the proper temp and not guess-timate cook time by weight.

I like your attitude. You’re spot on. I’m a lot older than you at 78. I first started running a charcoal smoker back in 1975. Got away from it for a few years and came back in 2008. I’m going to watch you. I really appreciated the points about fun and all.

I find that BBQ can cut through a lot of the disagreements and friction that otherwise exists between folks these days!

Really nice video and I must say I went through a similar process. Started out with a Weber gas grill, the 22 in kettle with the slow n sear. Then decided on the Weber Summit charcoal center. It does everything. I also recently purchased a Memphis Pro pellet grill which is an amazing cooker. I’ve used in 6 degree outside temps.(Buffalo) and held a 225 temp better than my oven. Great video I think you are right on with WSM. It is a nice place to start and go from their. I started with Big Joe. Now my son in law and I bought a Lang 60 a year ago. It was used. We love it. Take care

Good Video I really like my kettle, I have 22 wsm have a lot of accessories for both. This year I want to experiment with wsm. I think it will make longer cooks easier. I've added shelve and with Cajon bandit stacker you can make a lot of food. The kettle is better for shorter cooks easier to clean up. I really am a fan of Lonestargrillz & Shirley Fabrication. A 24 x 36 cabinet with griddle plate and sear grate would be nice. I'm some what introspective and I not sure Having to stoke fire for 12 hrs or more are my cup of Tea. I do really like lsg mini, the full size is not that much more. I think wsm can tackle most situations, I put mine together for pork butt, brisket, and rib hanging capabilities. I've been doing more dbl smoked ham chicken turkey. After doing pork butt I came to conclusion you need a long distant runner. I know your familiar with Slowhand AT Woodshed Bbq. I have several of his products for both kettle & wsm. The Wsm is an exact duplicate to Phil N Florence Baby. He encouraged me to get the wsm. I like the Gorrila Grillz pellet grill but I'm a little skeptical about all the mechanical problems they seem to have, pellet grills in general. I still have admiration for Kamato Joe 3. Realistically I think with family of 4 or less the kettle can do it all. It's easy to get caught up with the latest and greatest. I wanted to pull the trigger on several of these pits and I realized I could work with what I have, and at some point I would know and could justify moving up. That's why I liked your video, I have a hunch people don't master what they have and think something else might do the trick.

John, thanks so much for watching and for the detailed comment! I think you pretty much nailed the way I feel about cookers these days! A cooker has to be what's right for YOU & no cooker is perfect...but most can be learned well enough to produce some great BBQ!

Thanks. Nothing is as easy to use as a pellet cooker, but I believe the WSM's simplicity is an advantage (nothing to go wrong that'll keep you from cooking), and it's more flexible, IMHO. Thanks for watching!

I had to stop the video to do a search on that brand of cooker, very nice, not familiar w them here in TX. We have a number of serious, quality Pitt makers here in this region. Good job, like your shed, 👍🏼👍🏼👍🏼.

I love the LSG and some other Texas-made insulated cookers, but I believe these Cascade units are the equal of ANY of them! Thanks for watching!

Excellent video. I started with an offset smoker and had a lot of good fun and it did make some great Q. But the overnight cook got tiring. I currently have a Cascade Smokers Que DeVille on order. Still trying to determine what color to choose. I like the grey color you have. 1. Do you know the name of that color? 2. Are you happy with how it cleans up and looks after you’ve cooked with it for a while? Thanks for the videos. They’re very well done and very helpful. Mark

Thank you Mark! I’m super happy with the color. I think it’s charcoal gray. Rob at Cascade could tell you. Just tell him I’m the guy with the custom Que Deville on RU-vid.
