for chana dal specially its really important to add some grated ginger and a couple of pinches of Hing. Chana can give a lot of "bloating" by itself. adding ginger, garlic, hing will help reduce it. for bhindi the trick is to wash, pat dry and dry roast it for a few mins on a tawa. this will ensure there is no sliminess in it. roasting also maintains the green color very well. slit Okra lengthwise, sprinkle with some salt pepper and herbs and bake it for 20 mins on 300. Delicious and healthy finger food.
The most important ingredient in Chana dal is Green Fennel (somf), this dal is never complete without it, you can skip all other ingredients but not this one

Gliulia and Shrey. I am an Indian and My late father too eat his meal with a fork even when it was chappati and dal he used to push the dal / Gravy or subji onto the chappati with a fork. I have noticed this since my childhood, so let your dad use a fork to his comfort. Bon appetite .

Hi Shrey, in western Italian food they do.consume zucchini. What you can treat them to ghiya koftas. Ghiya I think is called bottle gourd. Ghiyas only have to be minced either slightly coarse or even fine in a mixer or in a kaddukhas as they call them in India n spice the mince with coriander powder jeera a little black pepper salt n green chilly paste madhur etc then deep fried n set aside. Gravy is prepared slightly thin with onion n tomatoes, the koftas dipped in the gravy, topped with melted ghee, garnished n served with paranthas or butter naans
Dal ,rice, bhendi with chapati cooke well with chatni our pikale. Eighty percent of proteins supply your body. Remember you use mung dal which reduce your acidity. Dal also ok but when its boile you reduce and remove through out foam water which contains acids.
any recipe of chicken/fish/paneer will be highly appreciated. you can try also try Biriyani, Pulao or other recipes like Pav bhaji, chaat or any tikka. I am 100% sure Giulia's parents cannot resist to feast on it.
Potato is technically a stem ; anyway one can enjoy Indian food as a sandwich or rolls or anything else. May be cook some desert for them . Halwa might be easier .
This is the real food which we Indian, particularly from North and Central India, use to eat at lunch. We also have, Boondi, Loki or cucumber Raita, Hari Dhania Chitney, curd with rock salt and Jeera and roasted Papad.
