A tip I learned from a physical therapist is to open your sink cabinet and to place one foot inside your cabinet to take the stress off your lower back 😁. That was an excellent harvest of carrots. Great job!

Yes you can put your carrots in the washing machine. My mom did that, straight in (no pillowcase) and it was my job as a small child to stop the machine after the tub drained, before it started to spin.

I love my electric kettle for filling jars with fresh hot water. When we upgrade for our coffee station (we do pour overs) I’m going to save my old one just for canning. I don’t have to ladle water, just pour it in and it boils in less then 2 minutes!

This is one of the best canning video's I've seen. You kept it real. You haven't stood up and said "look guys super easy". Instead you showed us the somewhat tedious process that is a labour of love. That in itself makes us see that it is worth it in the end. Thank you.

Dear Rachel, This segment on processing your harvest of carrots was superb in every way. Let me count the ways. First, l agree with you that there is absolutely no need to peel these young carrots. Indeed, I would even go so far to say it would be a waste. Secondly, thank you for telling us that the Danvers variety has proven to be the best variety measured by your experience. Thirdly, the best part of this segment and the most valuable was how you divide the carrots for a) canning, b) roasting c) snacking/shredding and d) the ends and tops for chicken broth. This part of the segment is very valuable for novices who already subscribe to the ideal of making full use of what they have grown and do not want to waste what can be used. You have thought all this out beautifully and have shared it. Fourthly, you connected the number of carrots you grow for the needs of your family and you broke down the number of carrots per quart and the number of quarts to feed your family. Once again thank you for this breakdown. Finally, the word ‘economy’ derives from the Greek word ‘oikonomia’ which literally means ‘household management’. It is important for us to be brought back to the original meaning of ‘economy’. You have done this for us in your segments on carrots. Another way of understanding ‘economy’ as ‘household management’ is that production and consumption are in one place: you grew the carrots, you canned the carrots, and you will eat the carrots all in one place. This is the original and perennial economy. Insofar as possible, this isthe best and most fulfilling way to live. You not only are embodying this ‘economy’ but you are handing on to us how to do it. I’m not sure I’ll ever grow this many carrots, but I’m really glad you’re showing us how you do it. I haven’t canned before and I’m a little intimidated by it, honestly.

I get it I was too. Nothing easier than water-bath canning some quick pickles, salsa, whole tomatoes. Definitely start with things you can water-bath can and work from there. Bet you'll be pressure canning before long

I used it and it seemed to make a ness of a bunch if them like little carrots bits mixed in with the nice slices. Does yours do that?

That 1870's Homestead I think you have to be diligent when using the processor, of course they will go like that, because my machine when you you put them in they fall over if you get my meaning, therefore I think it’s the side of the carrot that are the small pieces. I know its great to have them in uniform coin shapes, but I’m ok with that as I would rather save my hands. Still taste great at the end of the day. Take care 👍😎🥕🥕🥕

That's a lot of carrots, nice work. I have a pc of plywood with a hole in center about 3 inches in dia. and around the hole I have 2, sometimes 3 scrub brushes around it facing the center of hole screwed down with steel strap, it fits on a bucket I have filled with water. I hold the green and ream the carrot in and out of the bucket through the scrubbing hole, very fast and very clean. Not sure if anyone understood that...lol.

FYI, my Mother in Law(Baba Jenny if you're Canadian, you'll see her Ukrainian foods in the groceries stores), showed me how to dill carrots. Its the same recipe for dill pickles so have fun! Just make the same brine, same spices of your favorite dill pickle recipe and use carrots instead of cucumbers. It's so yummy! Wow, Rachel even after 30 years of canning and gardening, I'd never heard of using carrot tops in stock, thanks!

I am new to your channel and enjoy your videos. I have a Pampered Chef mandoline and noticed you did not secure the top piece on to the base. Then you put the item being sliced into the hopper It really is a good way to slice your veggies! Safer too than with the gloves. 😊. Best wishes!

I work in a community garden as a Harris County Master Gardener. At the beginning if the pandemic, our food pantries shut down. I was sent home with 8 crates of veets and 10 crates of carrots. I spread them on my driveway for the cleaning with hose process. Thankfully my daughter came by to help but it still took us 1/2 to wash, cut tops and bag/wrap them. I wasn't canning at the time but thats when I started. I started with beets. Now have done carrots, jalepenos, wax peppers, pickles and jams, salsa, tomatillo salsa, and other hot peppers. Today I used my mandolin to slice 12 lbs of large carrors I got from farmers market.

I have a Philips machine with 6 diferent blates. Cost me 75 euros. It cuts lots of diferent vegi and save a loooooot of time and should be less expensive in US. Try to find it and you will be a very hapy woman hahaaaaa....love from Europ!

You poor hands arms and back, I encourage you to look into a bigger sharper knife. That looks like a lot of pressure n your joints. Oh good, I wrote that before you got your slicer working. They look great. When you burned yourself, I jumped too. 😬. I’m so happy you will enjoy your harvest all winter.

I have a hate/love relationship with carrots....I hate the process !!! BUT !!! I love so much the end product of what i do.... Gets to my back so much, but for a couple days out of my life to get a pantry full it is so worth it 🧡

Beautiful carrots ! I have an All American 921 canner and love it . I really like your canner but if mine was any heavier I wouldn't be able to lift it. If you haven't had your canner very long you will find with use for some reason the canner lid seems to settle in and will be easier to line up . I would like to have another All A. 921 to can in half the time but when I checked Amazon they were out of all canner's but one and it was a thousand bucks !! I had never heard of the brand . Walmart was all out of canners too . People are being smart and putting food back for bad times. Love your video's ! Blessings, Linda

Keeping the extra lifting labor outside, I usually top, scrub & size my carrots outside. One inside I rewash & prep for canning. I've realized as I do bulk canning, I want a dishwasher for cleaning jars & a thick cut tool for my carrots. Do you ever mix veggies when canning: like peas/carrots?

Dehydrating works well with all sizes of sliced dice or shredded. And greens dehydrated is great powdered & added to greens powder. I don't Peel mine either. Dehydrated pickled carrot chips are delish. M6 carrot ends are great in stock. Freeze till ready to make stock or broth.

I got an electric tea kettle and it makes pouring the hot water in your jars so much easier. They heat up supper fast as well.

I bought a small electric slicer and it works great. You just set the width and slice away. I use it when I can or dehydrate. It was not very expensive and well worth it.

I wish Kitchen Aid would come out with a slicer attachment that cuts veggies a little thicker than the ones they have. I have three different ones and none of them will cut the carrots thick enough.

Wow. I'm in zone 6a . Our carrot tops greens are only 3 and 4 inches tall. Now I am so disappointed. What zone are you in?

Hi Rachael, I’ve been WB canning for years, but just started pressure canning last year. I love it. I canned my first batch of carrots. You said you can cook canned carrots so that they’re not mushy. They are always soft. We just cook them in a pan on the stove with really high heat for like 1 minute - it helps them stay together.

Oh how I would love to can carrots 🥕 but my ducks 🦆 escaped and got into my garden. Went straight for the carrots! I am going to try again to plant some fall carrots here in Georgia we can do that.

One day when you have your lid on your canner even, take a black marker and draw a line from the lid onto the pot so you will always know when your lid is on correctly. My husband went as far as drawing the line on with a dremal tool. It works perfectly. Have a great day.

Yes you can do in your washer gentle cycle cold water I also do potatoes that way too and it works fine

If Pampered Chef still has the garnished, I use it all the time. I don’t have as big a garden as you but I canned 10 pints of carrots yesterday. I through out the green tops this time because I wasn’t feeling it. I’ve already taken the earlier ones and dehydrated the tops and they are in canning jars. I have a second batch starting to grow and I planted a 3rd area where I took these out.

We try, but we're not perfect. We've even given the wrong time before, and had to take down and redo videos before. Always reference guidelines when you can.

I’m so sorry to be a complete newbie I take it then you’re pressure cooking them then in that monster of a device? So when you come to use the carrots they’re already cooked just like the ones you can buy from the supermarket, obviously tasting better as they’re home grown? or have I got this totally wrong? I’m just getting really intrigued in trying this here in Blighty. Cheers 🍻

Look up on goggle for your state altitude. U can raw pack,Or hot pack. Hot jars,hot carrots,hot pot.

If I may give some suggestions get a mandolin that has legs you're not having to hold it with your other hand it makes the whole process much nicer. Also, when you get the end of the carrots just use your palm to slide it up and down the mandolin so you can still get tiny pieces without squishing your fingertips. The KitchenAid mixer attachments I haven't read good things so I would recommend getting the large food processor it will save you so much time. My mom has arthritis and finds it hard to cut carrots for the horses multiple times a day. So, we got a large food processor, and it was life-changing it took minutes to do a ridiculous amount of carrots the really big ones it can handle great.

I don't have the space to grow the carrots we would go through in a year. I purchase organic juicing carrots in 25 pound bags and go from there. Makes things good for my pantry! You truly had a Bugs Bunny paradise!

The slicing guard on the mandolins are dangerous. As a chef I always used a cutting glove. It gives you more control and is much faster.

Just be gentle when you reheat, I usually through over high heat, drizzle with honey a bit of butter and herbs, no more than 5 mins

Hmm that mandoline doesn't look sharp. It shouldn't make that noise when slicing carrots. I worry that you could injure yourself with it. When sharp it takes seconds to process a carrot and is a terrific tool. Anyways, I love your videos and how dedicated you are.

Onion peels, cauliflower outer leaves, and pieces from the cauliflower, broccoli, cabbage, celery ends, centre pieces, & leaves all go for stock or broths.

You make it look like work! Use a green scouring pad that one would use in the kitchen sink for dishes. it removes any dirt and small carrot hairs . First I sit on the back porch and cut the green tops and put the topped carrots in a container where I come to the kitchen sink to wash and clean with the green scouring pad.Cut to the desired length or cut in rounds and start your canning process. If you're going to cut the carrots with a knife, try using a chef knife. It's much less tiring on your hands and fingers. I just harvested, cleaned, and chopped a small batch of turnips, and I was done for. I can't imagine processing such a large batch! You go girl!

A labor of love, to be sure!! I've been looking for that carrot greens Video mentioned...did that get made? I wasted so many carrot greens this year, not knowing what to do with them. Flavored some broth...what else are they good for? Thank you so much for all the great info.

That would be really nice to have a canner that can fit double stacked quarts, it would save a lot of time! Mine can do pints double stacked. Congratulations on the great harvest, you rock!

They sell mandolins like $5 that are so so easy to use and will whip through the carrots super fast.

Maybe if my fall crop does really well, I've dehydrated things in the past and rarely ever use them except my hot peppers

I just started dehydrating last year and I absolutely love it. It’s wonderful to be able to make my own instant rice and instant soup with dehydrated meat and vegetables. So much faster than having to start from scratch.

Have you thought about dehydrating your carrot tops and powder them up to use in a green mixture for smoothies or adding to soups and stews? I usually powder up as many greens as I have available. Each time I make it I always have different combinations lol

i just watched a video from Constance over on her youtube channel Cosmopolitan Cornbread she did some sweet carrots in a brine of brown sugar 2 c water 2 cups and orange juice 1cup bring to a boil and then lower temp and pour over the carrots.

To go faster, you can top and tail them all first, then you can just keep going slicing them with the device. Good harvest!!

Hi Rachel. Does your mandolin grater holder have like flappy bits on them? If so, it goes the other way and those handle/flappy bits cling either side of the mandolin to keep it stable for you 😁

Rachel LOVED IT just LOVED this video- I am waiting patiently for my carrots but unfortunately do not have a Pressure Canner yet- I am going to get one of those slicer gloves as I have nastiest scar (quite large) from my mandolin & freeze with fear every time I use it now. How do home canned carrots turn out compared to store canned carrots? I love carrots but I typically just freeze mine because I don't like how store canned carrots turn to mush. Do home canned carrots hold up a little better with the raw pack method or do they turn to mush too?

On your American canner,ya should Vaseline the rim every time you use it ,makes sealing a lot easier

When I process a big carrot harvest I never bring the green carrot leafs inside of the house. When you harvested them you can cut the top off right away. they can go straight to the compost pile. When you bring the entire thing inside it takes up too much space plus there are all kinds of bugs in the leafs that will crawl out and occupy ur kitchen.

I dont peel mine either. Canning 5-0 gets me all the time for botulism, but it never happens to my jars. Continue doing what's good for you and yours! I canned my carrots back in april, so fun to watch you do yours now! 😁

The pampered chef mandolin has indents on the bottom at the end so that it fits perfectly on a bowl. It's perfect for slicing potatoes. The one piece slides onto the mandolin for sliding back and forth. Then the holder fits inside of that piece. Once you figure it out, it's very easy to use ☺️
