Yields 1 serving
Ingredients
8-12 each 16/20 peeled, deveined shrimp
4 oz dry capellini / angelhair pasta
2 Tbsp Extra Virgin Olive oil
3 each garlic bulbs
1 each large shallot, small diced
2 tsp chili flakes
2 each lemons
¼ cup white wine
2 Tbsp capers
½ Cup cherry tomatoes, halved
½ Cup seafood stock
2 oz butter, cubed
1 parmesan cheese wedge
1 sprig basil, picked
Salt and Fresh Cracked Black Pepper
Method
Add water to a 4 quart sauce pot. Salt liberally, cover with a lid bring to a boil.
Heat a medium nonstick sauté pan on medium heat with one tablespoon of olive oil. When hot add the shallots, finely grate the garlic bulbs into the pan and sauté for 2 minutes to soften them. Deglaze the pan with the white wine and cook until it is almost evaporated from the pan. Add the seafood stock, chilli flakes, capers, cherry tomatoes and lemons (zested and juiced). When the sauce comes to a simmer, season the raw shrimp with salt and pepper and poach in the liquid for about 1 minute per side. Add the cubed butter to melt. Taste and season the sauce accordingly.
Meanwhile, when the pot of water begins to boil, add the pasta and use tongs or a fork to gradually push it into the seasoned water as it starts to soften. Boil the pasta, stirring occasionally so it doesn’t stick together, for about 3-5 minutes, or until al dente. Strain the pasta and quickly add it to the pan with the scampi sauce and cooked shrimp. Toss the pasta in the sauce to coat evenly. Finally, tear the fresh basil leaves and toss into the pasta before plating.
Plate the cooked pasta into a medium size bowl with some height. Garnish with a grating of parmesan cheese.

I love this. My husband and I often wonder how "done in 45 mins" turns into an hour and a half. Or one hour turns into 3. 😲🙄 We just don't have the same tools or space.

_Myth-busting_ is a great series! Jamie Oliver's (vegetarian cottage) allotment pie took me six hours in total of prep and cook time. I served it to my father at 1am. We've been living on the opposite time schedule ever since.

“Scampi” is the Italian word for langoustine, a type of crustacean that’s common in Europe (scampi are also called Norway lobsters and Dublin Bay prawns) and is much bigger than even jumbo shrimp that we’re used to eating here in the U.S. In Italy, a quick sauté in butter, olive oil and garlic (and sometimes white wine) is the traditional way to serve these sweet, pink-fleshed clawed crustaceans. Does this mean that “shrimp scampi” kind of means “shrimp shrimp”? We like to think so. But in all seriousness, a more accurate interpretation would be to think of the name “shrimp scampi” as meaning that you cook regular shrimp (the kind that’s easy to find here in the U.S.) in the same style as scampi (langoustines) would traditionally be cooked in Italy. from The Modern Proper

My old boss had a guess that shrimp scampi might have originally been called something like gamberetti al scampi. Or shrimp, scampi style. Or in other words, "If I had scampi, this is what I would do with it, but I don't have scampi; I have shrimp," but at some point the 'al' got dropped. I haven't been able to find anything to back that up, but it would make sense if that's the traditional way to cook scampi. P.S. Pardon my Italian if "al" isn't the right word there. I don't speak it.

Yep, agree, unfortunately the word means something else depending on the country you are in. For me, as yourself, scampi means langoustines. Another thing is that langoustines are in the lobster family with a different taste to any prawn/shrimp.

Gordon sure has some interesting experience but he doesn't know good simple easy food! This should be a pot to boil the pasta and a skillet to do everything else

No BS! Love this! I used de-pooped shrimp. I think 30 minutes? And wasn't filming. (Note: he does add salt if you see the recipe, but of course, doesn't show it.) BTW, shrimp scampi is normally really full of butter, this is a nice healthy version which I really liked. Have made a few times. But NEVER takes me 10 minutes. Subscribed.

I did Gordon Ramsay’s shrimp scampi, turned it into Parmesan Alfredo pasta in about 12 minutes. Messed up by not starting the water right away like I should but it’s definitely do-able in 10 minutes.

Yeah last year I cooked this dish based on Gordon's 10-minute video and it took me around 40 minutes. I will make the dish for my in laws next friday so I am preparing. Thanks for the video. I think the way to go is to have everything ready. Like Ramsey did.

I'm sure others have pointed this out, but if that's still an IKEA knife you're using, an expensive one that is well-maintained and sharpened regularly (not just honed) should help tremendously with the onion tears.

An alternative is to use your own sharpener to maintain the edge on cheap knives. I wouldn't use a home sharpener on an expensive knife set, but I can't justify owning one because I don't cook enough. Keeping my cheap knives sharp, however, makes them a pleasure to use and perfectly adequate for my needs. I suspect that you might get plenty of use out of a more expensive set of knives - a decent chef knife, and a couple of petty knives would probably be fine for you. In any case, you definitely need sharper knives. It's painful watching you work so hard!

I make a larger version of this and it takes me an hour. I use onions (half of one) instead of shallots, heat up frozen precooked shrimp and sausage, go heavier with the oil and tomatoes, add mushrooms, and I use seafood stock instead of chicken stock. (You use chicken instead of seafood. I’m pretty sure Gordon’s recipe calls for seafood.) I add some corn starch to make the sauce a bit thicker and then combine everything when the noodles are done. It serves like 10 people or two servings for me when I’m really hungry and then excellent meal prep for the rest of the week.

You should prep everything instead of prepping some things, cooking some things and etc. I think the optimized steps should be; Clean shrimp Start boiling water -> Prepare shallots, tomatoes and garlic. Add pasta to water. Start preparing frying shrimp and shallots at same time. Everything will come together at the same time and I think the whole process can be done in 30 minutes start to finish.

I’ve done it in about 12 mins. I bought all the ingredients, and got cooking since it was all there at arms length. Buy peeled shrimp , tail off. If you want to make it longer than necessary, buy tail on and burn the clock.

Fastest ive been able to do this is 30 minutes. I used frozen shrimo already peeled and deveined. I just thaw in a dripping bowl ubtil ready to begin prep.

Watching food videos to vicariously enjoy good food and cooking because I broke my leg this week and I’m lucky to manage an apple with cheese/crackers. Wine in a pint canning jar with lid,everything in a bag so that I can carry it with crutches. Only 12-14 more weeks,ugh!

I love making this. If all the prep work is done, perfectly. Down to the water boiling at the right time. It’s totally doable in 10 minutes. I’ve done it while the tutorial was playing and got it plated at the same time

I made stir fry Beijing beef tonight for the first time in roughly 30 minutes, not including the 30 minute ‘velveteen’ marinating process. Obviously I didn’t stir fry it for more than 5 minutes but the mis en place and sauce took 10 minutes to do. You did a great job

Slicing shallots. The manner in which I was instructed: chop means moving the knife in one direction as you did--down. Slice means moving the knife in two directions at the same time--down and forward. For many items, like shallots, slicing is easier and more precise than chopping. I think this is from an Alton Brown video from decades past.

professional chefs are fast because there is a large amount of prep work that is done before the cooking begins. getting your mise en place is key if you want to cook in an organized controlled manner.

If you had everything ready to go maybe. Oil in pasta water is not necessary. I would have pulled the pasta right from the pot and in to the shrimp pan, would make a bit more sauce. Will try this. Love your videos

I have made Ramsay's scampi from that video soo many times and I always think yhe same thing! Even the basil you have to wash first... and thennnn there's another 45 minute clean up!. This was funny tho

If you work on your knife skills just a little, you'll find that things will be a lot easier. Don't use the knife like a guillotine in a straight down motion. There needs to be some movement along the axis (in the forward direction, towards the tip) as well. If you do that, the knife will go through the produce much easier, with a lot less downward pressure, and it will make cleaner cuts.

My hispanic mom learned to make shepherd's pie from the Irish chef at her boarding school. The cook used gravy, diced onions, diced green peppers, diced carrots & peas. The potatoes were topped with cheese. My mom always made it with ground beef when i was growing up because we couldnt get lamb at our local supermarket. Never tried Gordon Ramsey's version, but I think because I wasnt raised eating it with lamb that I never liked this dish with lamb when i did have the opportunity in restaurants ... I guess I'm a cottage pie kind of gal... I went to an Irish Pub in NYC and I ordered shepherd's pie & it was the only place that I ever had it cut like a pie with a crust & all 🥧 ... interesting but not my favorite... I had an Irish coworker who was nice enough to make her recipe with ground beef as a surprise for me ... she made it so saucy with a scoop of potatoes on top. So good!

In all fairness, you would’ve cut your time down if you would’ve done the meson plus that you’ve been doing for for a while now and he also has his daughter Tilly recording for him so he’s not managing the cameras both of those components are going to take time off of course. The dish looks absolutely amazing. Every time I watch a video of yours. I get a craving of doing something like your first video for poached eggs. I had poached eggs that morning for breakfast, because that was what I was craving last night I was on your poutine episode, and I kind of wanted poutine, but it was late so I didn’tbeing a person that’s been cooking since they were six years old and I’m 46 now you run into times as you know where you don’t feel like cooking and watching your videos has helped spark some inspiration to make dishes that I love or try something new, so thank you for that

Gordon’s recipe, in your link, doesn’t say anything about adding oil to the pasta pot. I didn’t watch the video, though. My understanding (from Italian chefs) is that oil makes the pasta slippery and then the sauce won’t adhere to it.

It doesn’t really matter in this case since the sauce is mainly oil based anyways. But if it’s a cream or tomato sauce definitely don’t put oil in pasta water

I have only been cooking seriously for a few years: I thought the same thing about his Mise En Place. 1 I thought wow his shrimp is already pealed and deveined. He said use chicken stock in a shrimp dish why not use the shrimp heads/shels to make a stock which it looks like what you were going to do. Yes the cooking process takes 10 minutes if your heavily experienced probably takes me 30 not including prep

Gordon Ramsay has a sous-chef to take care of the prep work to for his 10 minute miracle of cooking. So, your 45 minutes minus 10, you were your own sous chef for 35 minutes. Chef's aren't concerned with how regular people cook, they are concerned with the credit they get for putting together a great dish.

Lots of these “10 minute meals or other x minute meals” really only tell cook time… they take no account of the prep time let alone clean up time for all the dishes used during the prep/cooking.

ps. adding olive oil to a boiling pot of pasta does nothing and is total nonsense from a physics and chemistry point of view (if the pasta is fresh it might have sense) - Italian speaking here.

The trick to doing it in ten minutes is to threaten you kids ahead of time by telling them they won't get ice-cream later if they don't peel and devein the shrimp for you. Hey, what are kids for?

Gordon Ramsay’s recipe doesn’t say to add olive oil to the pasta. My understanding is that we should not do that, because it makes the pasta slippery and prevents the sauce from adhering to it.
