Naan bread
Ingredients
- 2 1/4 cups all-purpose flour
- 1 tsp sugar
- 1/2 cup warm water
- 7g tsp active dry yeast
- 3 heaped tbsp plain yoghurt
- 1/2 tsp salt
- 1 tbsp oil
- Some oil for greasing the skillet
- 3 tbsp melted butter
- 2 cloves of garlic, crushed
- Small handful of coriander, sliced thin
Method
1. Start by mixing together the flour, sugar, water, yeast, salt, yoghurt, and a drizzle of olive oil in a mixing bowl.
2. Once the dough has started to form into a ball, turn it out onto a floured surface and knead for 10 minutes or until it's smooth.
3. Place it back into a greased bowl and cover with a tea towel for 30 minutes, or until it has doubled in size.
4. Remove the dough from the bowl and onto an oiled bench. Cut the dough into 8 even pieces.
5. Roll the 8 pieces into tight, smooth balls before rolling them out with a rolling pin.
6. On one side, place some garlic and coriander before flipping it and rolling out once more so it embeds.
7. Cook the naan in one of the three ways shown in the video, and as soon as they're cooked, brush with some melted butter.

A really good method I use that does involve a bit more attention is to wet one side of the naan and place that side into a ripping hot cast iron pan, cook for about 1-2 mins or until bubbles start to form, and then (using oven gloves for safety) flip the pan upside down and hold it directly over the flames of the stove, (the water prevents the naan from falling) and hold it there for a 30 secs to a minute and the naan will develop these nice crispy leopard spots. (note this only works with gas/flame stove).

I heat 2 cast iron pans & use 1 for the Naan and the other upside down on the first one to create an oven. Works for me.

Try splashing little water on one side of the naan and then put the naan on hot cast iron pan (wet side down). This will make the naan stick to the pan. Cook it for 1-2 minutes and then flip the tawa, exposing the naan directly to the flame. This brings results very close to the tandoor method and the naan comes out (un-sticks) easily once it's cooked. Spread some butter before serving.

I use a cast iron pan, hot as hell with a little bit of geeh, put the dough on, lit on, heat reduction to half so the pan stays hot, when I see bubbles flip an finish for some minutes.

Great recipe! Having test all 3 methods, here’s my 2 cents : nothing beats the screaming hot pan the stove. 1-2 min on each side… beautiful char and always create 2 layers. Lower temp methods tend to make it a single layer imho

I did mine in a ripping hot (smoking) cast-iron skillet with no oil. Also comes out very nice and you only need 30 seconds or less per side. I don't have a pizza oven or a nice flat surface on my BBQ, so this is the best option for me.

Hey Andy, you have to give Indian scrambled eggs a go. This has got to be one of my all-time favorite breakfasts. With chapati, it's the best! Not something you can get in an Indian restaurant as it is only really a breakfast dish. ENJOY!

I love Andy....But he's also figured out a formula... Idk whether he loves Indian food as much as he likes making it. But everytime he does such an incredible job with Indian food and hordes of loving Indians flock to his video and like and comment and susbcribe and make the channel grow exponentially. There's another technique we use in India where we place the nan on the back side of a cauldron\kadai. And it's a very effective technique for those who use a gas stove .
