You are the FIRST Korean that I've found that says you can use the common red salad radishes as a substitute. THANK YOU. I've used them as a substitute before on my own because I've tasted them and also tasted Korean radish and daikon, and the only thing I've found is that they are a bit more firm, and a bit less sweet....and daikon is about the same. It's hard for Americans to find Korean radish in rural areas, and they are lucky if their grocery store stocks daikon, but ALL grocery stores stock the little red/purple radishes....so it's actually a good substitute, and readily available.

My favorite side dish wen im out of kimchi. In israel we dont have korean radish so i use Kohlrabi because it is juicy and a bit sweet too. I love to add it to salads, rice, omelets and more.

Hi Maria! Kohlrabi sounds like a good substitution for Korean radish. I LUV that you enjoy the radish salad with so many dishes💚. You can also add 1/2 or 1/4 amount of the GoChuGaRu/Korean red pepper flakes, and turn it into a light and refreshing radish slaw salad (just julienne the radish to be thinner than in the video). YES, it would be great if there was an online Korean produce retailer that can ship fresh produce to anywhere. I would ask your local produce manager to see if he/she can get a hold of Korean radish.

Hi Bricky. I would use those round red/pink radishes if u can’t get Korean radish. Jicama is too sweet to be used as good substitute for this dish.

안녕하세요 !! Love your videos! I'm finally going to tackle making kimchi with the help of your videos. I have a question. I lived in S. Korea for 2 years a LONG time ago (Pusan, Ulsan, Taegu, Chinju, Sam-Chon-Po, etc. All in the south. So, I spoke with a southern Korean accent 😝 I was a missionary - sungyosa) My question: What do you call those spade shaped green leaves that are about 4-5 inches long and are covered in a kimchi-like paste? They had a kind of minty flavor and you could buy them in flat tins like sardines come in. I LOVED those leaves and I can't remember what they were called. They were always served layered right on top of each other and you would pick one off at a time with chopsticks. I miss Korean food so much! I swear, I ate more kimchi everyday than most Koreans when I was there.

Hi Jason! I LUV that you spoke with a southern Korean accent💚...so cool😎. As for the green leaf, I think you might be referring to 깻잎, phonetically prounced KkhetYip (perilla leaves in English) namu.wiki/w/%EA%B9%BB%EC%9E%8E And the dish you are referring to is called 깻잎절임 (phonetically pronounced KkhetYip-JeolYim) and/or 깻잎김치 (KkhetYip-Kimchi). Some are made fresh, pickled in the seasoning, and some are braised in the seasoning sauce so the leaves are cooked. I absolutely LUV having a big bowl of warm Korean rice with a stack of these pickled perilla leave...SO YUM😋. I also add a fresh perilla leaf when I make the lettuce wrap/SangChuSsam /상추쌈 Before you make the kimchi, please do check out my recipe blog. How long can you keep radish kimchi in the fridge ?

Hi Mable! I would eat this within a week. The longer you keep in the fridge, the more watery it gets. In general, Korean side dishes are made to be eaten within a few days, and the radish salad is best enjoyed within a week. Hi Tina! I wish I went to a formal culinary school. But one day when I retire, I can take a graduate level courses on Korean cuisine and its history. I would also love to go to other culinary schools in the states and in Europe. My only "training" is being a child of restauranters in my family and extended family members for many decades.
