Every year Florida's east coast gets covered in little baitfish known as Bay anchovies. Some people call them glass minnows and they are primarily found along the beaches and surf area. Last time I did a catch clean cook with the anchovies, I removed the head and guts. This time I kept them on and did not notice any difference. In fact they may have been better this time.

Pops loves 'em! I'm glad I found your channel. It's hard these days to find people who actually 1) eat what they catch, and 2) actually enjoy the cleaning, prep and cooking of the food. The meal is the absolute best, and my favourite part of the whole experience. When we limit out, we're off the water and ready for the real fun. You guys have a great family and great friends!

U should try fisherman's life if u haven't found him yet. He goes rock fishing in northern California and the San fransisco bay area and he will cook on the rocks and every thing he is interesting to watch

We used to catch smelt in Lake Huron by the hundreds, and we used to gut and head them, and we would fry them up like you did. They were like French fries, and even though I was young, I could eat dozens of them. I miss that they are not around anymore.

@@briand2614 I agree, they introduce the Trout and Salmon to eat the alewife (spelling is probably wrong) they would die off periodically and the beaches were loaded with them. You could buy bay and Lake Michigan property dirt cheap because of this. There are no more alewife die-offs but there is no more smelt either. Now you have to buy them at about $8;00/lb and they are shipped from Canada.

My grandfather would make these for me when I was a kid. He’s was from Cuba and he called them Majuas fritas. They’re amazing. You just brought me back to when I was a kid in the keys.

Hi Victor and Brook. In Barbados we call them fray. We put them in a flower batter with onions fresh scallions and season to taste. Drop in hot oil like a small patty.

The anchovies fried look great. Just a thought from 50 years of frying fish, chicken, shrimp and other game. Don’t flour your food until ready to fry and then flour only enough to fill the fryer each time. Flour-fry-flour-fry and it will be even crispier.

I grew up eating whole fish pan fried or braised so it doesn’t make me squeamish but it’s nice to see how open and experimental you are with things you’re not used to! Korean food also uses dried anchovies to make stock which is the basis for a lot of recipes. Smaller dried anchovies are also used to make a side dish to eat with rice which is super common

Hello Victor, Just want to say thank you for doing videos that promote the catching and eating of all fish, especially those smaller ones that don't live long. In fact these are the more nutrious and least toxic of ocean fishes and we'd all do well to focus on catching and eating them. Enough I come from a family of Fly In Camp Outfitters, in Northern Quebec, Canada, where we have Lake Trout, big Northerns, Walleye and Large Game, I'm still of the mind that smaller game and fish are tastier and will continue to be numerous and healthy if we leave the big ones alone. Good to see your generation promoting this approach to our wild foods. Thank you for these great videos. Steve

Loved the video Victor. Love it when Brook's dad and family come in and give their opinion. My dad used to do these little fishes served with hummus and pita bread or garlic sauce and lemon! Delicious and healthy!

You dad knows the secret, he had a bottle of 🍺 ! 😃 it is always a beer/wine snack since people eat them. You want it crunchy? Easy, put a small tea spoon of curry powder mix with flour, fry low heat, then turn to high before you take it out from the pan. Salt it while it rest. You will be worrying your beer supply. You can match them with all kind of fry sea weed, or springle with roast seasome seed. It is also a traditional dish when you eat rice congee as breakfast in asia.

Here in the Great Lakes State every Spring we would go smelt dipping. Much the same technique. Though we would gut and trim the heads. We would get about half of a new trash can full. Quire a family production line. My Sainted Grandmother would drop the finger length ones in the hot fry oil..pull them to drain on a metal cookie rack... then chow down. Everyone got a few pounds so too the neighbors. Guts and offal went into the gardens as fertilizer. Good video. Brought back good memories. Best

My Grandma used to cook 'sprats' when I was a kid, they were larger that your anchovies but cooked in a similar way, floured and fried, head, guts and all - some salt a little malt vinegar - YUM!

'Ohama', wow, in Swahili (East Africa) we call it Omena. Amazing. And yes you eat them whole. Gotta' prepare them right though because sometimes if not done right they can end up with a slightly bitter taste. But yeah, these are eaten around the world 😎

We at the Maldives love them deep fired to a crisp. We season it with salt and cayenne pepper and then fry them till it becomes crunchy and crispy. Just love them like that, and you don't have to worry about scales or guts this way. Also we clean it the way you cleaned them.

Here in England we have been eating white bait all my life and I am 70 years old. My grandson who hates fish orders them if ever they are on the menu. Sprats are slightly larger and cooked the same, wonderful. But well done for trying them you have been missing out until now. Try sprat the same way I promise you will love them.

love watching you guys. I am full time in Sanibel. I will have to get some of these for my kittens. I have a dehydrator now. I have had smelts with my dad before. I loved them but also had to try to get my head around the idea. Hopefully we will have a boat soon. We now have a house with a lift on our dock in our back yard.

On your flour-dusting mixture, try a 1/3 to 1/3 to 1/3 mix of flour, corn starch, and rice flour. The flour for browning, the corn starch for the food "glue", and the rice flour for the crispiness factor (rice flour doesn't absorb liquid).

My dad loves smelt. When we lived in Chicago we would buy them at the store and fry the smelt up. There is a restaurant named Goose Island on Division going towards downtown next to a bridge. Seem good eating. Not sure if the restaurant is still opened since I moved to Texas.

@@therealyt5725 Smelt are delectable! We used to go to a smelt fry every April that was hosted by the local gun club. Then the state (Michigan) said they needed to 'improve' the kitchen to comply with regs to the tune of $30k. Every April, I think of how much fun it was and miss it.

Hi Victor, i am from Brazil, we have some fresh water 'bait' fish here called "Lambari" they are your minnows from over there. We usually prepare them as you have done . Our little bait fish here are a bit bigger but they are good. Tip you could use corn flower mixed with the withe flour. that would surprise you. cheers for your channel and all the adventures with Brooke

Aloha Vik, Here in Hawai'i we call them Nehu. The way you prepared them looks delicious, I love small fry cooked whole. We eat baby goatfish we call oama (oh-wah-mah) cooked the same way. You can also eat these anchovy raw in poke' or cerviche. You can also add then to a batter along with sliced onions to make a onion anchovy tempura. They can also be salted and dried to eat as a snack, or used to make a dashi broth. Very difficult to catch anchovy here as small mesh cast nets are illegal here. Cast nets must have a 2 inch stretched mesh size here. I envy you guys.
