It's not exactly burning by the sun in early spring that affects them. If the ground is still frozen the root system can't reach enough water from the ground and that leads to drying which can easily damage young plants which don't have deeper roots. Only the surface of the ground freezes. How deep it goes depends on the winter. But it's less than a meter in any case in southern Finland.
