Chicory IS the substitute. I'm from NOLA. This is NOT our traditional iced coffee. We don't use chicory in our iced coffee, and honestly, chicory is an old hold out from a generation wistful about the greatest generation. You can find it, but you have to be looking. If you're using $14/12oz bags of coffee, chicory is not appropriate.
