Thanks for the video. It's nice to see a dough mixer that can be used at home that does more than just spin the dough. This looks like it does a much better job of kneading the dough that a standard planetary style mixer. The only major negative about this is that it isn't easier to clean. May still get one but cleaning does seem a bit tedious.
Cleaning is pretty easy and only takes a few minutes as long as the dough has been mixed properly. I just pour in a little bit of water and then sponge it out with any remaining dough. Then before I use it again, I give it a quick wipe with a damp sponge in case there is any dust.
With a single speed mixer, you need to do a 20 minute autolyse at the start. This will significantly reduce the mixing time and avoid the high dough temp issue.

@@webdesignerandrew6957 I finally got mine yesterday...tonight I wanted to try the machine...after 10 min of kneading it just stopped working...no when I try to switch it on, it automatically switches itself off...did you have similar issues? maybe the machine is overheated (but I only used 1kg of flour and 650 ml of water)...its a bit strange

@@babu981 70% hydro direct dough at 20 min (room temp 15C, flour ad water was from fridge. Dough temp final at 20C) 80% hydration (with biga) required 35 min in total. I stopped it 4-5 times, for cooling the dough.
Hi... I've a maxima msm8, and is not very good machine.... For idratation dough up to 75 or 70 is a bad machine... So, i use for high idratation all precaution and is very difficoult do it... I make once a 80% but it take 25 minute... Not good machine... Thanks
