This will be the only Cheese cake recipe that you will ever need.
I have used the graham cracker crust for this cheese cake, but there is another recipe for a crust that is wonderful. I use the graham cracker crust because it is a favorite. Learn how to bake and cook from someone who really enjoys food. I have always surrounded myself with the best cooks. We all take such pride in creating the very best cakes, cookies, and candy...especially Candy. I sold English Toffee for years, that was my specialty. Graham Cracker Crumb Crust:
1 cup plus 3/4 plus 2 TBs. graham crackers crumbs
1/4 plus 2 TBs. sugar
1/4 plus 2 TBs melted butter
Combine all the above ingredients. Press into a 9" spring form pan. Bake 375 degrees F for 8-10 minutes, till golden. Set aside to cool
Cheese Cake Filling: All ingredient for the cheese cake room temperature
5 - 8oz packages of Cream Cheese
1 cup plus 3/4 cups sugar
3 TBs. flour
1 tsp. plus 1/2 tsp. grated lemon peel
1 tsp. plus 1/2 tsp. grated orange peel
1/4 tsp. vanilla extract
5 eggs
2 yolks
1/4 cup heavy cream
Using an electric mixer combine cheese with sugar, flour, lemon peel, orange peel and vanilla. Add eggs and yolks one at a time, beating after each addition. Beat only until mixture is well combined then add cream and beat until well combined. Pour filling into graham cracker crust. Bake for 10 minutes at 400 degrees F. and then 1 hour and 20 minutes at 250 degrees F.
