As someone from Wisconsin, your cheese curds were spot on! Hope you enjoyed them. If you can find fresh cheese curds there pick those up and leave them at room temperature. I grew up calling it squeaky cheese because the fresh cheese squeaks when you chew.

I grew up in Wisconsin. As a kid, we use to get fresh, still warm, cheese curds from a local dairy. That is the true "squeaky cheese" you hear people talk about. If you ever get a chance, you need to try fresh cheese curds. There's nothing else like them.
@FriPilot
@FriPilot 3 месяца назад
That's essentially the way I remember learning about cheese curds. My dad was the local Culligan dealer, so helped a lot of dairies with their water issues. We would visit dairy farms now and then to check in on Dad's customers. Most always in time for fresh cheese curds! We never fried them. You lose the squeak that way!
@MrTommylk23

You got it bud, the only way to try them is fresh still warm. I never realized how many ppl here in Wisconsin have never eaten the fresh & still warm. Then again I was born in 1967 and was prb a more common thing when I was a kid. Oh crap that right "Go Pack Go"😅

I grew up 20 minutes south of the Wisconsin State line in Illinois. We regularly drove up to the Dells and Lake Geneva and to Green Bay to see family. The highlight of our family trips to Wisconsin were the cheese curds. There is no shortage of cheese shops in Wisconsin. The man I married had grown up on a farm but NEVER had cheese curds in his life. So, I took him to Wisconsin for the weekend and introduce them to him. If you ever go to Wisconsin, you have to try the deep-fried cheese curds and the cheddar/brat and beer soup! Just about every restaurant sells both. Bon Appetite!

Awesome snack. I can say that fresh cheese curds are a great Wisconsin delicacy. You will know they are fresh (made within 72 hours) when they "squeak" when you bite into them. Plain unfried cheese curds are delicious with a little sea salt sprinkled on top and alongside a good Wisconsin beer (or a cold glass of white wine) or a cold mug of Sprecher's Root Beer. Also curds come in more varieties than just plain cheddar cheese and Wisconsin cheese houses pride themselves on a wide assortment of flavored cheese curds like Cajun seasoned, fresh herb and onion or BBQ.

WI girl here! One tip, get your oil hot before you put the cheese curds in the batter, then you can drop them directly in to the oil from the batter, one at a time. As a person, born and raised in Green Bay Wisconsin. I never had a fried cheese curd in the last few years was the first time. Usually eat cheese curds fresh from the cheese store warm and squeaky just by themselves or I make a cheese sandwich. They have an excellent cheese pull. Try a beer brat. It’s a grilled pork sausage after it, grilled. Place all the grilled sausages in a sauce, pan in a saucepan, covered with any beer and a few slices of onion and heat it up just before it comes to boil pull it out put it in a hotdog bun. Enjoy with either sauerkraut, onions and mustard.😋 Thank you

Great job on your cheese curds. I am from a small city in Wisconsin called Manitowoc. When you visit Wisconsin try going up the coast of Lake Michigan. In Manitowoc there is the Wisconsin Maritime Museum and an actual WWII submarine. Manitowoc made 27 WWII submarines. There are 2 types of cheese curds in Wisconsin. Fried which you made, and fresh. The best fresh curds come straight from the dairy. They are kept at room temperature and will squeak when you eat them raw. I honestly didn’t know that badger came from miners not the animal. Learned something new.

Cheesehead here (person from Wisconsin). In addition to the battered style, you can also do them breaded. Standard "flour-egg-(fine) bread crumbs". Then toss them in the freezer in portioned bags. When you get a hankering for curds, drop them (still frozen) into hot oil to fry. The crispy outside with the gooey inside is absolutely wonderful.

Nice job, Atlanta! You make me want to try the recipe. Just so you know, when deep frying, don't put the oil any higher than 2/3 of the pot. The oil will always bubble up higher than it's original heoght. If you are going to Wisconsin in early August, the state fair will be operating. Their cream puffs are hugh and so light you have to hold them down or they will float away. Also in Wisconsin some creese productions kitchens may offer tours of how cheese is made. Interesting stuff.

If you ever come this way to try our cheese this is a time you can try many varieties from cheesemakers all over the state. The is a small community about 15,000 but brings in up to 100,000 on this weekend. It is the 3rd weekend in September in Monroe Wisconsin in 2024 and then not again till 2026. Actually the curds should be cheddar and salty like Feta, so it sounds like you got good ones. Some of your curds were too big. Ideally those bigger ones you'd cut in half or thirds. The secret to deep frying cheese curds is freezing them first, then putting in the batter. Use beer to replace some of the liquid. Then your cheese doesn't melt too fast and doesn't start to escape the batter before the coating is cooked and crunchy. ☺️

cheese curds are the solid part of what will become cheese. Its part of the separation of Curds (cheese Solids) and Whey (cheese liquid). the solids when clumped together make hard cheese after being squeezed for every bit of liquid to get out. Whey is used as a protein booster in a lot of products and can be given to livestock. Some curds are cooked to make this but the majority of solid cheese is curds. when cheese is made a natural enzyme called Renit is added to milk. this enzyme makes the milk turn almost solid and once an blade is introduced you get blocks of semi-solid cheese but agitated again you get curds. drain out the Whey and pack the curds into a wooden mold and you get the beginnings of cheese. press all liquid out and put into a aging room and in a year you get a great wheel of cheese. cheese is one of oldest foods out there and is labor intensive hence why it costs so much. you need the right conditions, time, humidity, friendly bacteria, and even the aging spot is picked with care. do not ever mess with a cheese maker or a cheese seller as they really know their stuff and they will call you out on things.

Sorry to say, you need to come to Wisconsin to get a proper cheese curd. Yes, fried cheese curds are a thing and they are relatively popular. In fact, fried everything is a thing here, to an extent you would likely find insane. That said, the best cheese curds are not fried. They are factory fresh. This is not something you can order online (there are some places that claim they sell fresh, but while acceptable, they are just not top tier curds). I'd personally recommend buying directly from the cheese factories, but that would require a special trip. As an alternative, there are cheese stores and local grocers that get fresh cheese (usually on a weekly basis). If you ever visit the dairy state, then I'd strongly recommend giving it a try.

If using fresh cheese curds (squeaky cheese) - put a few cheese curds on a plate, spread them out a little, then put them in the microwave until they are just golden brown - time varies depending on how many cheese curds & microwave. This is correct however Wisconsin cheese houses go a step further and "mill" their cheese curds in a specific way different from NY and OR. It is based on a Swiss tradition. That is why they have a more saltier taste...and you will find several different varieties of cheese curds in Wisconsin. They experiment with some crazy flavors up there.

I'm in Northern NY,,, Cheese Curd is so delicious cold and fresh. If it's not squeaky and a tiny bit salty, it's not fresh enough for me. (In My Opinion) We have a cheese factory locally and we always get it on Tuesdays (since that is the day they deliver it fresh to a local store here.)

You're incorrect. I come from a family of Wisconsin cheesemakers. My father won the national championship twice. Curds are an integral part of the process of making cheddar. That process is called appropriately enough "cheddaring." They are not made from left over curdled milk.

The thing about Wisconsin is that it is known for its delicious cheeses that they make there. They make the cheese curds and then prepare the cheese curds. You definitely have to go to Wisconsin and maybe take a Cheese Tour. 👍

I'm not from Wisconsin, but I can tell you that cheese curds are one of the greatest foods you can get at a bar or hamburger stand. They go great with a cold beer. Best to eat them before they get cold. Kinda rubbery at that point, but still OK.

Born and raised in Wisconsin near the cheese curd capital of Wisconsin. Ellsworth is the town and they have a creamery where you can get fresh cheese curds each day. They have a variety of flavors there including taco, ranch and dill. They even have a cheese curd festival! Love your channel! Keep it up.

As someone from Wisconsin fried cheese curds are good but nothing beats fresh same day made warm squeaky cheese curds right from a local cheese factory which are all over the place here. We are the cheese state for a reason.

Cheese curds are something made during the cheese making process before it sets into cheese. Fun fact: There are three American states known for their cheese, cheddar in particular. Wisconsin, Vermont, and Oregon.

I used to work with a lady from Wisconsin. We became good friends. Whenever she would go back home to visit family she'd bring us back some cheese curds. Love the squeak! Culver's is a fast food place from Wisconsin and they have spread all over the Midwest. They have some great fried cheese curds kind of like what you made today. You are now just a step away from making poutine, which is a Canadian dish.

From the looks of things, the cheese curds you had are virtually the same as you would get here in Wisconsin. But with cheese curds, freshness is perhaps the most important factor. After just a day or two, a curd will be noticeably different. Honestly, I'm just impressed that you were able to find them. Even in the US, they are fairly rare outside of Wisconsin.

As a wisconsinite I love a good cheese curd, when I make my at home I use lard as the frying medium. The reality is outsiders that visit Wisconsin often find fresh cheese curds to be left out of convenience store counters the first day. This is for the reason of how they squeak when bitten. That is the sign of how fresh they are.

Wisconsin here too! I've been to New Zealand.... what do you mean that you don't deep fry much in New Zealand? I think 90% of all of the food we could find to eat was deep fried! Fish and chips, fried squid, fried seafood of all kinds! As best we could tell anything crawls or swims in the sea you guys fry it up and eat it. It was three or four days before we stumbled into a bakery one morning and discovered that pretty good sandwiches could be purchased there (if you got there before they ran out). We kept them in our coolie bin for lunch. I loved New Zealand and can not wait to go back! You guys/gals are great!

Hii Robert, NZ person here. I know what she meant when she said we don’t deep fry much in NZ. You’re right there’s a lot of deep fried fast food, but in our own homes, we don’t deep fry much. There are people who have deep fryer appliances in their own homes, eg I myself had one, went through a phase of using it, then it sat in the cupboard for years, then got rid of it.

As a Wisconsinite, there is nothing like getting these fresh from the farm when they are still warm. They just may be the best thing you will ever eat. 😁If you guys do ever get here and come up to the North woods (rural Northern WI) I could take you guys out fishing and hopefully do a shore lunch.

I go fishing there a lot too. Those walleye are way more elusive than a few decades ago and there's too many people making the lake too loud now. When I was a kid, there were only fishing boats, now it's a constant parade of pontoon boats and annoying jet skis. The peace and quiet has been ruined by others.

Atlanta, I'm so glad to see this again. I lost your state foods series from Mississippi to here. Where were they done? I'd like to catch up. I'm not from WI, but I live just 17 miles/27 km. from the state line. There's a silly running joke we have here in IL with WI: when we're going into WI, we say we're crossing the Cheddar Curtain, which is a historical reference back to the Soviet Union days, and the synonymous Iron Curtain. I noted at the end that you said this is only #17 (?) in the series. So, maybe I didn't miss that much after all.
