Gestalts are the souls to the replicants, and each replicant is essentially a biological human body cloned over and over again. Once all gestalts relapse and all replicants die, that’s the end of biological and natural humanity. Humanity as WE know it, is completely gone. Whether or not an android or machine has the capability to resemble humanity in terms of sapience is irrelevant, as they’re still not physically human in any way.
