*Please note that nightshade-free is NOT a requirement of the low FODMAP diet. Though research is limited some people with inflammation issues, autoimmune diseases and conditions such as IBD, MS & arthritis report relief of symptoms when eliminating or reducing nightshades in their diet.

I made ketchup with steamed carrots, lemon juice, tamarind paste and beet powder 😋 👌 in the blender

If extra sensitive to nightshades, do be sure to check the ingredients of the vegetable stock as well. It usually has tomato in it. Chicken stock usually a safer option. Excited to try this one out!

Thanks as a vegan I don't use chicken stock but I've included a link in the description to my homemade stock powder that can be easily adapted to be nightshade free.

@@TheIrritableVegan hmm maybe Indian curry? Like a jalfrezi, madras, or tikka masala? I feel like I've got korma down - I use coconut cream, tamarind paste, mustard seeds, hing, loads of fresh ginger, chili-free garam masala, and white pepper.

I did write two recipe ebooks, one for low FODMAP Christmas and one for reintroduction phase but because of the frequent changes and updates to the FODMAPs they are no longer accurate so I have removed them from sale until I can update them. Thank you for the recipe. Its a great help for me since tomato is once of the allergen that cause my flare up in skin. Also seafoods,chicken,beef... Atleast with these i can still eat spaghetti

Thank you for this thoughtful recipe. I am not sure where to find garlic infused olive oil. Could I just sub olive oil plus some minced garlic since it gets blended anyhow?

The garlic infused oil is only necessary if you also need to make the sauce low FODMAP. If you only need it to be nightshade free you can add garlic and/or onion to cook with the rest of the veggies. 🧄🧅

Hi I made it finally. It had a good taste but came out more orange than red and very watery. I think I'll cut the water by half. I used canned beats instead of fresh. Can you give us the measurements by cups instead of grams? Thanks

@@fleas.8624 Oh, sorry to hear that the texture was off. I'm assuming you drained the excess liquid from the canned beets before roasting? We don't really have canned beets here in the UK but from what I've seen they are usually chopped quite small and canned in liquid? This likely means that they have absorbed more liquid than the ones I used which are pickled whole. It may also be why the colour was less vivid if the beets were more diluted. Other than that, did you bring the sauce back to the boil and simmer uncooked for 10 minutes once you'd added the stock? Also, if you have a good quality, high speed blender it may need less liquid to blitz into a smooth sauce. Does any of this help? With regards to the measurements I prefer to use grams as they are much more accurate than cups, especially when it comes to the ingredients that need to be portion controlled for FODMAP reasons. I'll keep your suggestion in mind and try to remember to include cup measurements where the ingredients don't require careful FODMAP portions.

The radish can be left out but it will likely result in a blander sauce. The radish are used as a low FODMAP replacement for onion. They give a warming, almost peppery hit to the sauce. If you don’t need your nomato sauce to be low FODMAP then consider replacing the radish with a few whole garlic cloves, half a diced onion and a stick of celery. These can roast alongside the rest of the vegetables. Let me know how well it works if you make the sauce without them.

wow amazing. can you use this to replace canned tomato recipe. what if you cant you can get get pickeld beetroot and have to use fresh ones. what can you add

Thank you. Yes, this is a great replacement for a tomato sauce for people that don't eat nightshades. It's a bit more earthy and tangy than a regular tomato sauce but just as delicious. Pickled beetroot is used here because it's the lowest in FODMAPS and has the most generous serving size. Raw beetroot unfortunately is very high FODMAP so is unsuitable for this. If you have canned beetroot available (it's not common here in the UK), then it's safe at 60g per portion. If using canned and not pickled beetroot you'll need to add some acidity, either balsamic vinegar or lemon juice would work. I would probably add balsamic vinegar to the vegetables before roasting. It really needs either pickled or canned beetroot. If you can't get pickled you'll need to add canned beetroot plus vinegar or lemon juice to give some acidity. If you can't get either then you could try it without but you won't get the red colour and probably won't have enough vegetables to make 4 portions. I really don't know how much removing the beetroot completely will affect the final flavour. Please let me know what you try and how it works out.

If you don't have to consider FODMAPs then I think it would work just as well. If you're in low FODMAP elimination phase then the limited low FODMAP portion sizes of squash would mean that you'd need to completely rework the recipe and adjust the liquid accordingly to get the right texture. Let me know what you try.

Nutritional yeast is a tricky flavour to replace as it's quite distinct and adds an umami, cheesy, slightly fermented flavour. 🤔 The best substitutes I can think of would be a fermented condiment, possibly a dash of soy sauce/gluten free tamari or 1 tsp of white miso paste. Alternatively adding more stock/broth powder, a pinch more salt or a light sprinkle of asafoetida will give you a bit more savoury, saltiness but without the same depth of flavour. A suitable yoghurt would add some of the tang but lack the savoury flavour of the yeast. I'd love to hear which alternative you try and how it turns out. 🤗

I have to avoid tomatoes because of the potassium (dialysis). Unfortunately, the same goes for the other ingredients (potatoes, etc ). Still looking for a good no potassium red sauce for pasta.

Hi Karen, I recommend freezing the sauce only. I would separate it out into individual portions. This recipe serves 4 generous FODMAP safe portions. I tend to use small, reusable plastic pots but sturdy freezer bags would also work. Defrost for 24 hours in the fridge before reheating in a pan until hot. The sauce may appear to split a little after freezing but comes together again nicely with a splash of water and a good, brisk stir. Hope this helps?
