I recommend the cassava beiju recipe. It's a Brazilian recipe that only uses cassava and salt. You can add the filling of your choice. Adding mashed banana and fresh coconut to the dough is also very good.

I just made these! They are so good! I love the slightly gummy texture and we used bacon grease and they were crispy on the outside! So good!

I'm watching this with my 7 year old son. The moment you added spinach, he cries, "What is she doing?! Why would she ruin her pancakes!" Ha! I guess I won't be able to pull off that trick with him. I have looked for an AIP pancake recipe before but none of them are actually AIP. I am so excited about this one because I can actually try it! Can you make these without any sugars because I react to some natural sugars.

sure - just remove the sugar and you should be fine. I've made these as savory pancakes before like that and they were good with some greens and curry sauce!

Thank you! I actually tried yesterday day and added stevia and that worked! I eyeballed the stevia because I didn’t want it to have the stevia aftertaste.

Will try this recipe !! Michelle could you tell me if saffron is allowed on aip ? I don’t see it mentioned on the internet on the not approved list - but neither is it mentioned as approved.

Update: My little pink pancakes came out fantastic! Just wanted to add that I didn't have any cream of tartar on hand, but omitting it didn't seem to cause any issues.

Hi. Are arrowroot and cream of tartar interchangeable as a thickener?

I don't believe so - the cream of tartar isn't so much a thickener as it is a form of acid/leavening agent to help make the pancakes fluff up. Arrowroot wouldn't really do that as far as I know.

How long are you supposed to do AIP for I see so many different answers from 3 months to a year?

I usually recommend no more than 3 months on the strict elimination diet, and then slowly reintroducing foods one-by-one over the next few months. So it can take a year overall, but staying on the strict elimination part for longer than 3 months is not really recommended as you aren't going to heal further and in fact can start losing tolerance to some foods (your gut bacteria starts to change and it's harder to reintroduce the foods that those gut bacteria like to feed on later). If you're still not feeling better after 3 months on elimination it's most likely due to some other factor, like a gut infection (quite common), parasites, nutrient imbalances, etc - usually at that point I highly recommend working with a doctor or functional medicine practitioner to figure out the root cause just because AIP can only do so much.

yep, totally fine to have carob - especially carob powder. Just be careful with pre-made carob chips as they often have wheat, barley, or other non-AIP ingredients in them.

not really in these particular pancakes. There are lots of other AIP pancake recipes out there though that don't use cassava, so you could try one of those!

Couple ?’s: can i use plantain for banana and is there a substitution for tapioca? Can i mash tapioca pearls? I live in an isolated place so really hard to get ingredients Thanks! New to AIP and you have SAVED me girl!!

Hmm, so I *think* the plantain, as long as it's a blackish yellow one would work. A ripe one would probably make the whole thing too starchy, but maybe it'd work. And don't think mashed tapioca pearls would work. Do you have arrowroot starch/powder at all? That would be a good sub, or you could try just doing all cassava... Sorry I don't have better suggestions, there are already limited ingredients to work with so substitutions are hard!

What can I use in place of coconut milk since I’m trying to be heart healthy. I don’t use coconut oil.

Tigernut milk would work. But I do recommend you read up a bit on fats like coconut oil as they aren't as bad for you as mainstream media (and the very lucrative biz that the sugar businesses) like you to think. Fats were demonized intentionally by the sugar industry back in the 50's and we've believed them ever since. I can attest that I've been eating a higher fat diet now for 10 years, including lots of coconut oil, palm shortening, lard, olive oil, avocado oil, etc and all of my markers have gotten SO much BETTER. It's all about inflammation in your body (which a lot is caused by sugar) and not the fats we eat. I use olive oil, avocado, and omegas 3s in general. Coconut oil is great I’m told if you don’t swallow it and keep it to a minimum. It’s very controversial for cardiovascular health but touted for brain health. If known your APO status must be considered.

you can, but I'd add about a teaspoon or so of apple cider vinegar (or some other vinegar) instead. The cream of tartar helps activate the baking soda and subsequent fluffiness of the pancakes and without it they wind up rather flat

It's a leavening agent to help the pancake rise and be fluffy. It's the main component of baking powder (besides baking soda) but since most baking powder is made with corn and/or aluminum it can't be used on AIP, so instead we make our own by combining baking soda and cream of tartar.

Replaced milk with water, skipped the tapioca starch, salt, tartar, vinegar, added greens though, and it became one oily mess :D I was so desperate for a sweet breakfast that I actually enjoyed it. Since I don't have all the ingredients, which ones are the most important for consistency? (I think I will start with actually having enough coconut milk) :D

haha, glad you still enjoyed it. Unfortunately I'd say you probably would need all of them as they all kind of work together to make it work. You could replace the vinegar with lemon juice and skip the salt, but yeah... the others are kind of important. Sorry!

Eh, I'm not really sure, sorry. I haven't tried it with this recipe at least, and it would probably need a different method of preparation (like with hot water to activate the yeast, etc)

eh, as long as the coating is intact non-stick is ok to use. Could there be some issue with it? Maybe, but that's going down the rabbit hole of health crazy for me. I like to stick to bigger picture things that'll give me the most "bang for my buck" healthwise, like making sure I eat good foods, exercise, and stress relief rather than worrying if every little thing is going to harm me (because in reality, you can find harm in almost anything these days)

Nothing but a gummy mess... Followed the recipe except I used arrowroot starch instead of tapiaco starch... So disappointed. Every AIP bread product I make is all gummy and not edible...
