Niramish Mangsho-mutton curry for Bengali Kali puja

Niramish mangsho is a mutton dish that used to be cooked with sacrificial goat meat. Because this dish is offered to the Goddess Kali, it is cooked without any onion and garlic. This omission of onion and garlic is apparently enough to earn this dish the 'niramish', that is, vegetarian, tag in the eyes of Bengalis.
Niramish mangsho is in spirit similar to the Kashmiri rogan josh, which too uses only ground spices and no onion or garlic. Since this was traditionally cooked with the meat of goats that were sacrificed to Kali, it is best to use the meat of a small goat for this recipe. The larger, grain-fed, fattier 'rewaji' mutton is best reserved for dishes with onion and garlic.
Since this is a special dish for Kali Pujo, we have chosen to grind the spices from scratch. It can, however, be also made using readymade powdered spices.
The Bengali word 'niramish' is interesting because, unlike the English coinage 'non-vegetarian', niramish literally means 'non-meat'-ni (not) + amish (flesh). This makes 'amish' (or flesh) the default word, with the term for 'vegetarian' derived by pre-fixing 'not' to it.

Ok those who don't know the logic behind calling this vegetarian, here is a explanation for it. Usually in the eastern part of India, we worship the Shakti form of Goddess. Goddess Kali is the revered in Dash Maha Vidya/Avatar of all Goddess. The other forms are Tara, Chinnamasta, Bhairavi, Bhuvaneshwari, Tripura Sundori, Bagalamukhi, Dhumavati, Kamalatmika. These are worshipped in tantric methodology which includes sacrifices. Though it limits to few places only. So sacrificial meat is being prepared without garlic and onion for which in Bengali we considered it as vegetarian. As we consider onion and garlic as non veg. Btw as said in Tantra "Jaha Prakritik taha hi Tantrik". One that is natural that is tantra in itself.

My father keeps on sharing memories from his childhood pujo at home (when we used to have sacrifices). To him, this niramish mangsho, cooked with bata moshla (including the turmeric), was better than every other preparation.

Thanks for sharing this. The niramish pathar mangsho is the only kind cooked in our family, albeit without the hing. It's my mother's specialty. People who have never tasted it find the idea confusing. But once they have, it's preaching to a choir!

Loved that you used the stone grinder, in Kerala we call it as "Ammi". Reminded me of my childhood where my mom and grandmother used to make chutney using these stone grinders. Once I tried using these stone grinders.

Love this recipe. My daughter has to follow a low fodmap diet and can't eat onions and garlic which pretty much excludes all meat dishes so this is a godsend (no pun intended). :)
