The best soft texture gf white bread recipe I have ever seen. Not sure how you figured out these very involved steps. Is the sweet potato used Japanese sweet potato? In the United States Japanese sweet potato is more dense compared to a few other varieties. For gf bread, it’s really hard to achieve nutritious as well as delicious …. Such an obstacle.
Hi thank you for this wonderful recipe. I am sure it took u long to get this right really appreciate your effort. Is there any chance I can substitute the egg to plant based/vegan.. Some say flaxseed/chia seed meal in water can work. What is your recommendation? And also the white/yellow sweet potato not so easy to find in my fav stores. I don't know if flaxseed works. I tried without eggs, the batter rose good, but it retracted after baking. The orange sweet potato has a more moisture content and needs to be reduced.

After the bread is baked, it needs to rest for 5 hours before slicing. The baking pan can be lined with baking paper. When the temperature of the bread drops to room temperature, place it in a food bag for hours to soften the crust.

Thanks, Oliver. Tapioca starch is the best for making starch gum because its unique molecular structure, but you can still try potato starch. You can use the same ratio as tapioca starch and see what will happen.

I have tried to make the bread using the bread machine. To tell you the truth i used a whole package (7gr) of instant yeast. The bread came out good. I left it in the machine and when it cool down hours later the surface is hard but inside is soft enough. The taste is okay. Again, thank you for making this recipe. I am going to try your bao recipe.
@@lannynjoo2399 Thank you for your kind feedback. What was the temperature when you bake in the machine? Maybe you need to reduce the temperature to 180℃ if the bread outside is too hard.
@@lucymeishinobinderglutenfree the bread machine, i set the menu on 'gluten free, 750gr loaf, medium crush', was automatically for over 3 hours from the flour mixing until the bread is done. I don't know how high the temp is. I don't have the bread mold so I can't bake it in the oven.
