Sri Lankan Chicken Noodles Recipe by Aasai Rasai
200g Harischandra noodles
1.5L water (to boil the noodles)
1 chicken breast (skinless, boneless)
Few tablespoons oil (for frying)
1/4 big onion (sliced)
5 to 7 curry leaves
6oz shredded carrot
4 oz leeks (dark green leaves and stalk)
1 banana pepper
Spices: (Black pepper and dry chilli flakes are optional)
1/2 teaspoon garlic powder
1 teaspoon ground black pepper
1/2 teaspoon dry chilli flakes
Salt to taste
Method:
Boil the noodles as directed.
Suate chicken in oil until it is no longer pink. Add curry leaves & onions and fry until fragrant. Add the carrots and fry for 5 minutes. Add condiments and spices. Add the leeks and peppers and fry until leeks sweat and slightly wilt.
Finally mix in the noodles very well until even colored.
