Those butane torch heads are priceless and nut much popular in north America. I buy hem from korean grocery storers. Chinese stores have them too but not a good quality ones. I have seen in North American restaurants they use Bernzomatic Propane torches but they are very heavy.
I just made the pizza, experience: - It has to be medium heat, or it won't be cooked - Pizza must be thin, the crust has to contain air, not mass!!! - It won't be burnt at bottom, not by far - The torch must be very strong, otherwise it won't be as nice as in the video
Il cornicione è ben lontano dalla vera pizza Margherita. Il cornicione deve essere più alveolato e con meno mollica ma mi rendo conto che fatto in questo modo non è semplice 😂
