I will show you how to make the dough for yeast doughnuts and how to make two types of doughnuts: the classic ring doughnut and the cream-filled doughnut.
This is an easy way to make them without a second fermentation, so please feel free to try it.
I fill a frying pan with oil to about 2 cm high and heat it to about 170°C (340F).
Donuts with whipped cream and ring donuts
Ingredients for 8 pieces
150g each bread flour and cake flour
4 tablespoons (40 g) sugar
1 teaspoon (5 g) salt
1 teaspoon (4 g) instant dry yeast
1 egg (50 g)
70 g milk
70 g boiling water
30 g unsalted butter
100g heavy cream
15g sugar
2 tablespoons granulated sugar
4 tablespoons powdered sugar
(Summary)
Melt butter in boiling water.
Mix the flours first.
When butter is melted, add milk and pour into a container.
Crack an egg and add it to the mixture and mix well.
Primary fermentation until doubled
Fold the dough several times to release the gas.
Let rest for 10 minutes, cut into 8 equal pieces and roll into a ball.
Let rest for 10 minutes and form into a shape
Fry in oil at 170℃(340F ) for 2-3 minutes on each side.
