Recipe Spotlight: Oatmeal Fig Bars
These chewy tender treats are a variation of store-bought sugar-packed fig bars, but with a healthy Homemade twist! The warm cozy flavors of maple, vanilla and orange zest make these bars so delicious - and the combination of crumbly oatmeal topping and jammy figs is absolutely heavenly.
Figs are celebrated for their many health benefits; packed with vitamins and minerals, figs are especially helpful for digestive health. Not only are they packed with fibre for bloating and constipation, but also a great source of prebiotics - a food for the healthy bacteria populating our gut.
Figs and oats share the ability to lower LDL cholesterol and boost heart health, as well as helping to manage blood sugar levels. Talk about a healthy snack! These bars are perfect for freezing, so you can enjoy them in moderation and save the rest for another day.
Ingredients: Serves 6
Filling:
2 c. (280g) dried figs
1 c. (240ml) water
pinch of salt
1 tbsp. orange zest
3 tbsp. maple syrup
Bars:
1 tbsp. ground flaxseeds
2 ½ tbsp. water
1 ¼ c. (160g) oat flour
1 ¼ c. (100g) rolled oats
½ tsp. baking soda
¼ tsp. salt
4 tbsp. maple syrup
⅓ cup (80ml) coconut oil, melted
1 tsp. vanilla extract
Directions:
1. Cut off the stems off the dried figs and place in a small pot with 1 c. of water, a pinch of salt, orange zest. Bring to a boil then reduce to a simmer and cook for 30 minutes.
2. Set aside to cool slightly, then transfer to a food processor, add the maple syrup and blend until pureed into a paste.
3. Preheat the oven to 350°F (180°C) and line an 8”x 8” (20cmx20cm) baking dish with baking paper.
4. Make a vegan egg by combining the ground flaxseeds with 2 ½ tablespoons of water in a small bowl. Stir well to combine and set aside for 5 minutes.
5. Combine the oat flour, rolled oats, salt and baking soda in a bowl then set aside.
6. In a separate bowl, combine the maple syrup, vanilla extract, vegan flax egg and coconut oil. Fold in the dry ingredients and stir until combined.
7. Spoon half of the batter into the lined baking dish and press it firmly into the base. The dough is sticky so using some parchment paper to press it down will help to keep it from sticking to your hands.
8. Top the base with the fig paste and press into a thin layer. Drop parts of the remaining oatmeal batter on top to form a crumble, gently press to cover the fig layer.
9. Place the dish into the oven and bake for 25-30 minutes until the edges become golden brown.
10. Remove from the oven and set aside on a wire cooling rack to cool completely before serving. These fig bars can be stored in an airtight
container in the refrigerator for up to 4 days.
