Onugbu soup is a delicious Nigerian dish made with bitter leaves and cocoyams and eaten with any 'swallow' meal of choice. I used cocoyam flour in place of fresh cocoyams because of the tedious process of preparing the fresh cocoyams 😊. Ps: You don't add onions to the native onugbu soup.
Ingredients:
Bitter leaves ------------------------ 3handfuls
Offals (cow intestines) --------1kg
Ponmo --------------------------------- 250g
Dry fish -------------------------------- few parts
Stock fish ---------------------------- 4 ear parts
Panla fish ---------------------------- 4 small sized
Habanero pepper ---------------- as preferred
Crayfish ------------------------------- 3tbs
Palm oil--------------------------------30cl
Cocoyam flour ---------------------50g
Salt -------------------------------------- to taste
Stock cubes ------------------------4cubes
Ogiri (fermented castor seeds)-1wrap
Uziza seeds ------------------------ 1tsp
You can enjoy onugbu soup with eba, wheat meal, fufu, pounded yam, poundo potato and the list goes on and on... Including eating the soup alone with spoon 😉
