Old Fashioned School Fete Toffees are a classic sweet recipe, perfect for bake sales. Sugar is combined with water and vinegar, then boiled until golden. Sprinkles with 100's and 1000's, this rock solid "jaw breakers" will keep everyone happy (and quiet hahaha) - give it a go!

RECIPE FACT SHEET
=================
INGREDIENTS IN THIS DISH:
2 Cups of White Sugar
1 Tablespoon of White Vinegar
1/2 Teaspoon of Cream of Tartar (optional - if making soft, chewy toffees)
3/4 Cup of Water
2 Tablespoons of 100's and 1000's / Rainbow Sprinkles etc
Preparation Time: About 5 minutes
Cooking Time: About 20 minutes
MAKES ABOUT 10 TOFFEES (depending on size)
NOTE: If you have trouble removing the papers from the completed toffees, simply dip them in some water and the papers will peel off easily ;)
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC
(Look up Google for a conversion chart if using Imperial)

A fete is similar to a flea market, lots of stalls selling all sorts of things. They are frequently held by schools and churches ;)

Growing up in Melbourne meant having these at every school event and kids party! It was always these, fairy bread and those chocolate rice bubbles cups too! Cheers for the trip down memory lane!

Yes, you can add colouring. Add it once the sugar is dissolved but before it starts boiling. You can test the toffee to see if it is cooked by having a bowl of cold water nearby. Spoon a small amount of toffee into the water to test the consistency, if it hardens then its ready ;)

Usually they become grainy if you don't brush away the crystals while cooking the toffee syrup, or if you stir it once it starts boiling. Hope this helps ;)

Thanks buddie . I’m so trying those .yep had them as a kid school fetes lol .I’m 53and I used to do a lot of cooking but I have never made toffees . I’ll be trying those 👍😂💞

Yes, you can add flavoring to the sugar and water (before it boils) - Orange Essence, Vanilla Essence, Peppermint Essence etc would all be good ;)

Yep...stickjaws in Sydney. I left Sydney in 1967 and have lived in 4 countries since. I still remembered the recipe well enough to make it for a couple of my kids in Ireland in 1973. But later, in Canada, it was gone from my head. I have never seen this toffee anywhere else in the world (I've been to about 22 countries) so I knew immediately that the chef on this video would be an Aussie. Sure enough! Thanks so much for the reminder. I will be making this toffee for my friends here in Spain.

they were the first things I would buy! back in the early '70's, they were softish...you could take a bite and have long strings of toffee. I used to look for the red ones

This looks similar to a hard candy that's made in the states around Christmas time but with cinnamon oil added. Now that brings back memories. Thanks for another great bit of food to try.

Simply dip the base of the toffee (with the paper on) into some water. The paper will get wet and peel straight off ;)

Just done this. loved it. Only thing is I had no idea how to clean my pot and glass jug of the toffee. I had to google it. So maybe how to clean would be helpful in a video.

I use to love these!!! They also made red and green ones. And always have a box of lamingtons half chocolate and half strawberry ones yum!!!! Can u make strawberry lamingtons for us David? :)

I remember making these as well when I was very young. When you don't let them set all the way, they become very chewy. We used to call them stick jaws when they got to that stage.

In the recipe it says to only use a bit of the sugar do you add the rest of it as you go.

They last weeks maybe longer. Store in air tight container. Love them.been making these since I was a kid l 50 years

We used to make Apple fritters as well. I distinctly remember doing this in prep - stirring the sugar and then 100-1000 the toffees. They'd never let kids do this now, it would be a liability nightmare! Kids are not allowed to burn themselves any more (or learn that burning hurts but cooking is good!)

I need to mould it with my hands, to make the illusion of beer pouring out of a can suspended in mid air. Do I use this recipe? Can I start to mould it while it is still hot. Messed up so many times now, lucky sugar is cheap.

yes toffee apples im assuming its the same thing except you stab a cold grannysmith with a skewer and dip it in the toffee while its molten, then sit top down while it cools,

Lishy It also gives the toffee a different flavour as brown sugar has molasses in it. The toffee gets a sort of slightly smoky, golden syrupy flavour and colour. Use unrefined raw sugar if you don’t like the burnt molasses flavour.
