This is one of my all time favorite Sunday afternoon comfort foods
Its a dish you can slow cook on a Saturday night and have ready to warm up for after church Sunday dinner
Serve it with some candied sweet potatoes,green beans,cornbread and some chow chow and you have an awesome dinner that for sure will put you too sleep
Recipe:
2# cut oxtails washed and cleaned
1 whole sweet onion chopped
1# fresh purple hull peas(you can also use crowder,creamers,black eyed)
2 tsp salt and pepper
3-4 qt water or chicken stock
4-5 sweet peppers(optional)
place oxtails and onions in large pot
season with salt and pepper
let simmer for 1 hour
after 1 hour add peas and peppers and cook an additional 1 hour or until peas and oxtails are tender
(adding more water as needed)only need enough water or stock to cover peas)
