This is my grain-to-glass Grainfather clone of Omnipollo's 4-21 Raspberry & Vanilla Smoothie IPA. 4-21 is part of Omnipollo's Magic Numbers series, a set of small-batch, limited-edition beers which blast off even further into the unexplored reaches of brewing. It's fruity and sharp from the raspberries and wheat, but the vanilla and lactose gives it a creamy, almost thick character hence the 'smoothie' in the name. A fabulous beer that I couldn't wait to clone on the Grainfather.
This recipe was taken from Euan Ferguson's book 'Craft Brew' which is full of fabulous recipes from the world's best craft breweries.

FULL RECIPE DETAILS:
Batch Size: 24L
Boil Time: 60min
OG: 1.056
FG: 1.012
Fermentables
3.20kg Pilsner Malt
1.02kg Pale Wheat
520g Flaked Oats
Mash Steps
75min @ 67°C or 156°F
Hop Additions
31g Mosaic Pellets at 10min (Boil)
79g Mosaic Pellets at 0mins (Hop Stand)
236g Mosaic Pellets (Dry Hop for 5 days)
Yeast
2 x packs Fermentis Safale S-04 (Rehydrate as per video)
Extras
480g Dextrose added start of boil
840g Lactose added just after boil ends
1.6kg Raspberries added end of fermentation before dry hopping
3 Vanilla Pods (I only used 2) sliced and added with Raspberries. I used alcohol rubs to sanitise each vanilla pod (I don't think it's essential tho!)
I primed and conditioned my beer with 150g Dextrose

I have missed your videos but this video was well worth the wait. I would say out of the hundreds of beer videos I have watched including my own rubbish ones this is the BEST I have ever watched! Just fantastic!

Dts1953 have to agree with you. BeardyMan has a nice pro vid feel but he gives you plenty of information in fun way. Still love the one where he and his brother in law were singing. There are only 3 channels I really look forward to on grainfather brewing. Beardyman, David Heath, and Gary James.

Scott Hayes I totally agree with you Scott, those are the three I like and enjoy the most. In fact it was watching Gary James first brew day video that made me buy a grainfather and move on from kit brewing. I have also learned so much from David Heath he really is a clever guy

The BeardyMan Craft Beers I may have missed this somewhere in your videos or responses, but do you put your recipes in the grainfather recipes database or any other dB that can be downloaded for use? No biggie if you don't since you do say what your recipes are. Btw, I did purchase the pdf version of the book you recommended for this recipe. Thanks

@@TheBeardyManCraftBeers was a good run for my first go at all grain, was looking for 1.054 but ended up with a 1.063 OG but not complaining, sample from wort was a little sweet with a smooth warming burn from the chili, let it ferment away for couple weeks then 3 days dry hop with the amarillo looking forward to the end result.

Hello Japan! I've taken a break from brewing as arrival of new baby soon so fully focused on that. The videos are great fun but take a lot of time to create but I hope to start back on more episodes in the latter half of 2019 : )

Awesome videos Beardy man! I actually made this recipe last night! I had a bit of a problem with the Grainfather(was my first use with it) I must of not placed the overflow outlet to low? I had grains in the worth🤷‍♂️! I managed to hook up the recirculating arm and put a strainer underneath! It served well! Anyway it’s in the conical fermenter awaiting the next step! I really enjoy your video’s and recipes! I look forward to trying out more!

Good Day Beardy man I brewed this almost 2 weeks ago. Now I have a question, my OG was 1.060 and I’ve taken a reading of my SG and it’s @ 1.018. Should I be worried? Thanks

I am from Brazil and I have a Grainfather too. I love yours videos that are amazing...I am not sure if I can replicate this recipe here because I don't know if I can find this ingredients like lactose in Pound and this vannila, I've never seen this here. Congratulations for your fantastic Brew Day....

Fantastic video ! really well put together. sounds a cracking recipe too. Lucky you being able to drink in a bar on Good friday ! Up here in the North we cant buy an alcoholic drink until 5pm with our stupid license laws fs. Ive recently been using homebrewcompany ireland, and service has been great, grain crush being very fine sometimes only issue i have. must look into their recipe builder, havent tried that yet. cheers mate :)

Another question but unrelated to this video, just watched your kegeratory DIY video. is there any problems when its comes to screwing holes through the actual fridge? like i was thinking that it would hit some kind of mechanism or something? or is it dependant on the fridge and stuff? thanks again man your videos are great! would love you to do a Julius - Tree House Clone

Hey Andrew, yeah you need to be very careful drilling the holes in the kegerator as many fridges, to my realisation after making that video, have the cooling wires in different places. With my fridge you could actually see them on a panel at the back of the fridge but most fridges they are hidden in the walls - I got slated for not mentioning this in my video.

Hey Gary, many thanks man! Before I had the Grainfather I did a lot of allgrain brewing in a DIY coolbox, very easy to setup and lots on RU-vid too. I love the Grainfather, very easy to use and the updated app is super too. Am currently working on a new video, I've been off the radar for too long now 🍻👍

Hi, I have problems to do a good Whirlpool using Grainfather because it's narrow and I didn't see you doing whirlpool. Perhaps because you are using bag. Is Your bag for malt or hops ? The bag keep all hops in the bag or you have some hops to fermenter too ? Thanks

Paulo Martins Yeah I've also had issues with whirlpool which is why I use the large hop bag. I also use the hop bag when transferring to bottles/kegs 👍🍺

G'day beardyman, great vid! Mate, the gravity needed when you add the raspberries and vanilla, is that when you reach FG or before? If it is before FG what gravity reading did you add your fruits at? It's not quite clear in the vid. Keep'em coming bud!!!!

Just brewed this! Really found the video so helpful! I have dry hopped and all my hops are sat on top of the raspberries...did you mix it at all I’m afraid it’s just sat there useless!

I use a similar pot for my sparge water, and find that i can put it on my kitchen bench on a little stool to raise it then just let the water out of the tap straight into the basket to sparge, lot less messing around than with measuring jugs. Might be difficult if you don't have litre markings inside your pot though.

vincemc Great point and I've been playing around with ideas for a while now to enable me sparge directly without a jug. To spare straight into the Grainfather I'd need to raise the pot much higher and I'm a bit cautious about that going wrong. I also have a small pump which works but I need a good sparge head. As you said, my biggest issue is knowing the volume transfer from A to B as I've no markers on the pot. My sparging technique isn't ideal but I get great results each time tho.

Mr. BeardyMan, I'm chuffed. This is so freaking delicious beer and probably one of the best I've brewed. After primary pH was below 3.8 (before adding raspberries) so my version is a bit tart but don't care it's delish! Nice to see you upload new content. Keep it up!

Yeah vanilla extract would be more noticeable and irreversible if too much added so definitely less is more - I could have probably put in an extra pod but didn't want an overpowering presence 👍🍺

I would've liked to use your exact formula, but since I don't have a fermentation cooler, I had to improvise for a bit. Because of the warm weather, primary fermentation was really explosive, and was done after about two and a half day. This morning I've added the raspberry, and I'm infusing water with hops to make a hoptea. This hoptea is made of two liters of water that I did take in account the brewing process. So after the boilperiod, I had a somewhat higher SG then regularly you would expect. I warmed the water up to a boil, into the brawler, and waterlocked it at 72 degrees celsius. I added the hoppallets, in hopsacks, so the expansion wouldn't all soak up all the liquid. Let this cool down naturally, and then, add to the main tank. For good measure, the hops in the brawler were aso going into the fermentationtank. This way, the dryhopping was pasteurized, highly efficient, and I had a good change to optimalise my chances of not contaminating the brew. My fermentables were as following (batchsize, 20 liter) (And I had some bits of almost empty bins that I just wanted to finish up) 2300 grams of pilsnermalt, Dingemans 750 grams of wheatmalt, Dingemans 500 grams of pale wheatmalt, Weyermann 300 grams of pale ale malt, Dingemans 400 grams of oat flakes 200 grams of wheat flakes Mashsteps: 62 degrees celcius 45 minutes 72 degrees celcius 20 minutes 78 degrees celcius 5 minutes Boiltime: 60 minutes After 5 minutes of boiling, I added 10 grams of cascade, just tot prevent an overboiling accident 10 minutes before end of the boil 23 grams of cascade. Stopped the heating of the mash. Cooled till the wort was 78 degrees. Added 60 grams of cascade malt. Whirlpool. Added 360 grams of dextrose/glucose. Added 630 grams of lactose. 1,2 kilo's of frozen raspberrys. 30 ml of vanilla extract. Dryhop: 260 grams of cascade hop pallets. Yeast strain: S-04 I hope to add the hoptea upcoming friday. Let it sit till monday afternoon. (I think 5 days is really the maximum amount of days. I'd like to dryhop for 3 days. Bottling at temperature of 22 degrees celcius. I expect a natural hazyness. Add to 20 liters 170 grams of dextrose for priming. Mashwater start: 14 liters (Now because of the hoptea, this was 12) Sparching: 9 liters. SG start: 1057 start Target end: 1011 end I'll let you know how it is when it's done!

You'll get away with one pack but many brewers recommend 2packs. I went with one and it was perfect, but make sure to rehydrate yeast. Thanks a million for watching bud 👍🍺

Hey buddy! We are about to brew a similar beer in the near future. Never used any fruit before. How do you calculate the ABV from OG/FG when you add fruit (which i assume would add some sugar and therefor change the Gravity?) Hey Eric, many thanks for watching! Now in most cases fruit won't increase the ABV of a beer, and if you're adding fruit to a strong beer it will actually lower the final alcohol content. So I'd only work out the OG/FG as normal and just add the fruit for flavour properties. This is one of the best beers I've ever made, an amazing one for long summer evenings! Only issue is it can run out fast so make loads lol!

Hey champ thanks for video very helpful however in my sleep deprived state I have added the final hops to the wort instead of when it was to be racked with raspberry vanilla. Will this affect any of my secondary ferment by not having it in at that stage.

Would you add more vanilla pods then just 2 or 3 or even more raspeberries, considering the amount of dry hop. I want a real balance so I don't want my hops overpowering vanilla and raspberries. I'm planning 27l batch so I would probably go with 2,5kg of raspberries and 4 or 5 vanilla pods. What do you reckon? Thanks mate!

@@pavelhuczala5815 Hey Pavel, it's a fabulous gift to give family/friends for Christmas. Some of my mates still talk about this brew many years on, I really must brew it again! My recommendation is that you use either the Grainfather or Brewfather app to 'Scale Up', I don't recommend a manual scale up of specific additions as it might affect the end product, especially with vanilla. However, my own brew had a light vanilla aroma/flavour which I was after so an extra vanilla pod might not rock the boat. I've learned in the past that scaling up just specific additions does impact the overall recipe which is why you should really only do a full scale up to keep the recipe in sync and balanced. This will be my next beer. I have watched the video at least 3 times (will no doubt watch again), and have been listening to Mercury Rev, so I feel ready! A couple of questions though... 1. Why did you put the lactose in to the hop spider? Does it not dissolve completely? 2. Why is rehydration of the yeast so important? I have not used US-04 before, only US-05 which I usually just put in to the wort dry.

Hey Trevor Masters I only had my last bottle of this beer at the weekend and it was great! Thanks so much for watching bud! The lactose can go in anywhere, sorry that wasn't actually intentional as yes it will dissolve instantly. Directly pitching dry yeast is said to kill a large portion of the viable yeast cells, leaving those that remain stressed from the extra work they have ahead of them. Stressed yeast can create unwanted flavors and aromas during the fermentation process, so it is good practice to rehydrate dry yeast before pitching into the wort. Let me know how your beer turns out and stick on Mercury Rev during brewday too 🍺👊😎

Do you know what the SG was when racking? I have not used US-04 before and it has stopped bubbling after just 5 days. SG is 1.026.

I think the specific gravity should be around 1.014 plus or minus a few points. But check it after 10 to 12 days fermenting. Mine was a bit on the high side.

Absolutely, I've only used frozen raspberries as fresh raspberries here are just too expensive and not always in season. Yeap bitterness is low, I much prefer beers with late hop additions.

The benefits of secondary are a bit questionable at best; adding things to the primary fermentation vessel after fermentation has finished isn't that much different; most homebrew beers don't generally stay in the fermentor nearly long enough to start suffering from yeast autolysis or other related off flavors. Chucking things in primary may well bury them in the trub, though; limiting exposure of ingredients to the actual beer and perhaps hampering infusion. That's purely speculation on my part, though. Personally, and this is anecdotal, I've had some stellar results with clearing beer with a secondary 'fermentation'. Transfering from primary to secondary knocked a whole ton of extra yeast out of suspension without the need for additional finings. I don't know the mechanism by which this works, but it's certainly helped me produce some crystal clear beers. You can use it as another fining agent in your repertoire, if anything.

After fermentation I added Dextrose by boiling a cup of water, turning off the heat and adding the Dextrose to the boiled water to fully dissolve. I then opened the fermentor and poured the dissolved sugar evenly over the floating fruit - the hot water has no ill effects here btw. I then fixed a large hop net around the rim of the bucket (fermentor) before popping in my syphon and filling my bottles. I didn't show this as I covered that part in a previous video but for me its a great way of filtering only the beer into the bottles and I didn't have any bottle bombs - but of course bottle bombs can be caused by lots of other reasons too. So I left the fruit in the fermentor while syphoning from inside a hop net - it worked out really well for me but I understand people have different approaches to that part.

I have only just finished my brew. I syphoned to a 3rd bucket, primed with dextrose and bottled storing at 20degC. I couldn't help myself and tried it after just 5 days of conditioning. It was carbonated and I have been drinking it ever since :-)

Only issue I’m having is that I’ve put all the numbers into Brewfather and it’s coming back with an OG of 1.064, FG 1.020, EBC 5.9 and IBU of 32. Only number that’s close is ABV at 5.8% 🤣

Cheers Andrew, thanks for watching! I think Omnipollo use dextrose at the start of the boil to keep the gravity lower during the boil and helps with improved hop bitterness extraction. The lactose is added after the boil to raise the OG by 3P (about 12-13 specific gravity points). Lactose is almost completely unfermentable - it won't increase ABV but it will increase the gravity of the wort tho.

Hey Chris buddy, definitely only go with the G30 if cost isn't an issue, it's amazing! So dude, what I use is the STC1000 temperature controller, it connects to the fridge and I also have a greenhouse tubular heater inside the fridge also connected to the STC1000. You get perfect temp control and the result is fantastic beer! Where ya from? Ya brewin long?

@@TheBeardyManCraftBeers I’m from the UK Manchester to be specific! Ahh thanks a lot! Definitely something that I’d invest in as I love the concept of it keeping it at the perfect temp ha! However I’m just in two minds of whether to buy the grain father and start brewing by grain or not, as I only have ever brewed by kit.. and they don’t taste anything like your good old local “pub ales” and have a very peculiar taste, I’ve never actually tasted a brew which had been brewed by grain that’s all. In terms of brewing I’ve been on and off at it for two years now or so, definitely still learning with each batch I brew!

Watch as many videos on the Grainfather as you can, it will help with your decision. I was once like you with regards to brewing kits and when I moved onto all-grain it was a game changer. You have the ability at that stage to brew fantastic craft beer and it's a great sense of achievement. @@TheBeardyManCraftBeers I tend to find that’s all I’ve been doing the past couple days 😅😆, but I totally agree with you, I feel as though I am quite limited to what you can brew with the kits where as all grain you can do whichever you like (I think that’s what’s making me want one) as I watched your raspberry and vanilla IPA yesterday and I just thought “that actually looks like it’s taste amazing”😅😅! But yeah that’s another thing also, the expense obviously the grainfather is £600+ but then you need things stuff for the fermentation stage, sparging water etc. yeah I’ll have a look thanks bud! Where did you say you bought all your ingredients from again? As I was looking on eBay etc. And buying them all separate can work out quite expensive ha!

I tried a fruit "dry hopped" beer in the past, had MASSIVE gushing problems. :( How did you completly filter out the raspberries? My hopfilter didnt work as i hoped. Thought you would put the raspies into you hopbag...

Pity to hear about that issue on your fruit beer. What I always do when filtering is just before bottling or kegging I place a large hop net into the fruit beer in the fermenter and siphon out the beer from inside the net.....works well 👍🍻

Just prepping this for my weekend brew. Putting recipe into Brewfather, I cant get the IBUs anyhere near 14. A 10 minute boil with 30g will give 17 IBU and then we have the 70g hopstand, even at 80 degrees for 20 mins that will give an additional 13, so 30 is the lowest I can get it!!! Am I missing something?

Hey Neil, yeah sounds a bit high alright, I'd need to look back over my notes on this brew if I can get my hands on them. I've heard tho that there are some differences between the GF app and Brewfather on the IBUs even after importing the BeerXML....what are the alpha acids on the hops?

@@TheBeardyManCraftBeers The AA is slight,y lower than yours at 12%. When I imported into Grainfather the IBU went up to 40... I think that's because the 70g of aroma hops went in at flame out, and on the Brewfather app I put them in at 80 degrees. One difference I can see is that I put the dextrose and lactose in as fermentables on Brewfather a d you put them in as extras on Grainfather. But as they increase the OG I thought that fermenrables was the right place to put them..... Anyway, I'll give it a go on Saturday and let you know how I get on. I must say, I'm really looking forward to this one. Cheers, Neil

@@neiljones641 It's difficult to calculate IBUs on anything after flameout but I don't think the increased IBUs will affect your overall beer. It's an outrageously good beer, amazing colour, fabulous aroma and the body is perfect for those long summer nights. I'm actually gonna be brewing a Mango Milkshake NEIPA very soon, using Lactose again and really excited about it. Sure keep me posted on how your brewday goes bud! All the best, Glen

Cheers Richard Brown many thanks for the comments 🍻👍 The labels can be done easily on a computer with a word processor like MS Word or MS PowerPoint and then printed on a home printer. My advice tho is to Google 'craft beer labels' and note the design elements or features that you like and also try cloning some label designs too 🍻👍🍺

It seems many here love the way yours turn out although I'm sure much of it is just your design. I'm not much of a graphic designer😁

Yes, adding frozen raspberries works each time for me on this recipe 👍🍻 Freeze for a day or two, thaw and add straight to beer after primary. While the cold won't kill all of the bad stuff, the yeast will overcome any stray bad guys.

Hey beardy man, When I brew this I do a 6 step mash. B-glu rest/starch/protein/b and a amylase/mash out Are all those necessary?? Will it change the beer if I did just a regular mash?

Cheers Jim, many thanks for watching! The recipes I clone are ones supplied/published by the brewery. So the masout stops all of the enzyme action (preserving your fermentable sugar profile) and makes the grain bed and wort more fluid. For most mashes with a ratio of 1.5-2 quarts of water per pound of grain, the mashout is not needed. 👍

From your recipe at the top it states a FG of 1.012 but on your video it looks like your hydrometer reading is 1.020 as a FG. The reason i ask is that i have finally got round to brewing this and my FG appears to be 1.020 as well (has been for 3 days now). Great vidoes by the way, any plans for a new video?

Thanks for sharing your recipe. I enjoyed watching this video...but to be honest -- and with no intention of offending you -- the generic guitar music was quite exhausting...I couldn't watch the whole thing so I had to mute the volume and turn on the captions. You know a lot about brewing...personally I would much prefer to hear you talk more about beer and your recipes and techniques than listening to the same guitar riffs over and over. You have great camera presence and a wonderful voice. Cheers,

​@@TheBeardyManCraftBeers OK...finishing now primary fermentation after 2 weeks. Wort taste is amazing! :) I cannot imagine when adding rasps, vanille and HOOOPS wow! BTW about addition of vanilla, I will apply a system that has always given me very good results: I have 2 weeks in vodka maceration 2 vanilla pods and a natural extract of vanilla to enhance the taste (obviously I like vanilla) . Normally I do not do secondary but in this case I will. I will use frozen raspberry (I have 1.9k) and I have thought to make a mashed ground with them by putting them in the crusher. Do you think it's a good idea to enhance the flavor and make better use of it? We will continue informing ;)

@@fernandolopezangulo6750 That's excellent man! Yeah the idea for the vanilla is good, but I don't think you need to go through much trouble mashing the raspberries, they will break down naturally in the beer. Let me know how it turns out for you..... exciting stuff!!! 👍🍻

In previous brews I only used phosphoric acid to lower PH and a half a camden tab to remove chlorine. But in an upcoming video I'll be adding minerals for a NEIPA.

Frozen Raspberries are better anyways, they are harvested when ripe, are sterile, cheaper and more available year around.
