We're big fans of Omnipollo and this milkshake IPA all grain recipe from Euan Ferguson's Craft Brew home brewing recipe book really hit the spot. If we brew it again there are a couple of changes we'd make but all in all, it's a great recipe and we highly recommend it (and the book in general).

TIMINGS:
00:00 to 00:25 - Warminster Maltings
00:25 to 06:15 - Brew Day
06:15 to 07:05 - Adjuncts & Dry Hop
07:05 to 12:02 - Tasting
RECIPE:
20L batch
Target OG: 1.054 (without lactose)
Target FG: 1.010 (without lactose)
ABV: 6%
-Water Profile:
Ca 100 - Mg 5 - Na 50 - S04 10 - Cl 250 - HCO 150
-Grain Bill:
Pale 2650g
Torrefied Wheat 880g
Flaked Oats 440g
Dextrose 440g
Lactose 700g (we used 1000g)
-Mash:
Strike water temp 72°C
75 minutes at 67°C
-Boil:
60 minutes
Mosaic 27g @ 10 mins
Mosaic 67g @ Whirpool (30 mins @ 75°C)
-Adjuncts:
Raspberry Puree or Raspberries 1300g
Vanilla Pod x 3
Added after active fermentation
-Dry Hop:
Mosaic 200g
Last 3-4 days
-Yeast:
SafAle S-04 English Ale (we used WHC Saturated)
160 billion cells
Ferment at 19°C

Haha, it really does. I had this chat with a vegan in Brewdog Bath at the weekend. I suggested she take a flask of sugar syrup around with her to sweeten to taste!

A timely vid - Have just bought 2kg of that Funkin' puree and wondered when would be best to add. Raspberry Porter. Great vids, lads. Nice set up.

@@twolittletanks we aren’t professional brewers so our opinion won’t be professional but we’ll do our best! It could be a number of reasons: interplay between hops and yeast (bio transformation), the addition of sugar via fruit could kick off a second active fermentation it’s best to avoid dry hopping in, perhaps the brewery (or writer) wants to benefit from certain hop characteristics by dry hopping later rather than earlier (Cloudwater did an interesting experiment on dry hopping after active fermentation as opposed to the more traditional ‘last 4-5 days’). Brewdog dry hop for the last 4-5 days at 14 degrees. Usually with fruit you get more benefits in terms of flavour and colour the longer you leave it in there. Probably a combination of all the above tbh…

Hi Lads I have done 3 clones from your so far and they taste amazing, I just wondering if you would be interested to adding another clone recipe to your offer? I have done some research and can’t find anyone in UK sealing Foster’s clone , will be this possible please? Thanks Andrzej

Thanks for the support! 🍺 Fosters is a difficult one because the hop it uses (Pride of Ringwood) isn’t really available here. We have our Simple Lager which is quite close but slightly stronger at 5% but we could do a 4% version too?
