@@Michelle_Emm There should also be a warning about broad beans as they can kill people who have G6pd deficiency. The common name is favism, the broad bean is a fava bean. If you're eating broad beans and your urine starts to get darker and darker and you feel lousy, you should stop eating them. In vulnerable people the beans cause the haemoglobin, the red part of the blood, to separate from the blood platelet, leading to severe anaemia and death if not diagnosed. I know because I have three boys with this congenital problem. Women are the carriers of the defective gene and can become anaemic but it won't kill them. Business idea: pre-portioned packets that contain the right mix of dry ingredients to make your recipes, specific to your recipes. For me the biggest sticking point to eating less meat is cooking “meat like” meals requires a small chemistry set stock pile of additives. Not unlike a taco seasoning packet, to make chickpea burgers, I’d buy the chic pea burger packet. I’d be more inclined to do it. Sell a cookbook and a 10 pack of dry ingredients for a selection of recipes.

I love when you really bring your recipes to the basics to show people that you can totally have a super satisfying vegan dish without all the special ingredients (which are great from time to time, bot not everyone has access to them). @@goldenhospitality8521 errr well so many things, the bread is almost out of any nutrients and it's bleached and refined white flour, the mock meat is made with a lot of processed ingredients and vegetable oil (which is a processed and highly unstable ingredient). Vegetable oil is one of the biggest culprits for cardiovascular disease and diabetes in the planet, the amount of sodium is above the recommendations per day, his line of food is seldomly eaten with raw vegetables/salad or any dark leafy greens. I’m not vegan… and most vegans don’t “always make their food resemble meat” Most vegans make whole plant based meals that have nothing to do with meat. It would be like watching a bunch of bbq channels and thinking that all meat eaters only eat food that’s been bbqd. But I make plant based meat because I enjoy the flavor of meat but not what comes along with it. So I replicate the parts I want and avoid the parts I don’t. Taste and texture are not the reasons I gave up meat. Those are the things I enjoy. I also make food like this because I want to. I enjoy it, and I enjoying seeing how close I can get. I’ve had plenty of dishes that absolutely and not only compare but are better than the original and I’ve tested with meat eaters. It’s a very narrow mind to think that since you’ve tried maybe a small handful of plant based meat dishes that you know how they all compare

You could probably sub TVP (textured vegetable protein) for vital wheat gluten. Another option I’ve used is to throw soft or silken tofu in a food processor with olive oil, and blend it until it’s smooth. It’ll be a fairly thick tofu paste that works great as a binder, and also adds tons of protein. That won’t have quite as meaty of a texture/bite, but it’s still delicious.

With a stand blender, there's no need to drip the oil. I use 50 ml of aqua faba (a little less than 1/4 cup) and 100 ml (~ 2cups) of a neutral oil like canola, **right out of the fridge**, put them together with the spices and garlic in a tall container and then use the stand blender on highest speed and it immediately starts to emulsify. If the consistency is not like mayo yet, add some more oil. You can also use soy milk instead of aquafaba. It is important that all ingridient are at fridge temperature (~4 °C/~40 °F)! Most recipies tell you that the ingridients have to be at room temperature, but in that case, it takes very long to emulsify. I discovered this by accident some years ago. I have a very cheap stand blender, but it works perfectly.

big fan of this! not a fan of "MUD\WTR" though. the founder "discovered" masala chai, added mushrooms to it, and called it MUD. sick of white dudebros repackaging someone else's culture to turn a profit

Honestly, I HATED black bean burgers. Maybe it was that a lot of places ended up with a mushy, drying texture... maybe it was because every single place trying to have a vegetarian menu did an overpriced black bean burger and a caprese salad sandwich.

I don't think she likes the burger 🍔😂. She is picking at it, barely tasting it. If you don't like it just say so. You're not going to like every vegan dish your spouse makes. Actions speak louder than words. It's okay. Just give your honest opinion. We are still going to enjoy the videos.

96 ingredients for a dry looking burger with more starches than chickpeas. I don't think the aioli is enaugh to compensate all that trouble and the glutenbomb. You even remembered about the MSG.

What does Marmite add to it? Can it be optional? Not sure if I want to buy it for just this one recipe. I guess if it was really good I'd make it again. But I will have to substitute some other things in it. Like what can you use instead of the gluten if you're gluten free? And can I use rice instead of Oats? I just looked up substitutes for Marmite and I could use chickpea miso. I will also be using alternative marinara for the tomato, my recipe.

All that great work to make the burgers healthy... and then a processed white bun. You could easily make a delicious lentil/psyllium husk bun and make this whole meal 100% healthier.

Aquafaba is the gassy, saponin filled, refuse of commercial bean processing. What is lining the can and where does the water they cook the beans (inside the can) come from? They may be processing spam in the room next door which should worry vegans, right? If you actually prepared dried beans you might notice that the foam that is constantly rinsed off, over the two days it takes, is what you are whipping up into fake meat, cheese, dessert. All I can say is that it is at least a good thing you aren't using canola oil although I bet a lot of fake meat, cheese and egg lovers do use commercially processed seed oils. There is more than one way to kill people off aside from meat.

Too much work, for anyone trying to go vegan. I've chosen to stand in the middle. I do mostly vegetables; but other times, I can have a good piece of salmon or sea bass, or chicken breast added to my salad....and life goes on.
