Samosa is an Indian deep fried spicy snack usually served with tea . In India we can see numerous varieties of samosas. The famous ones are made by the ..
Samosa is a stuffed pastry popular in Hyderabad. It is generally fried in triangular shape with a savory filling. The stuffing includes the potatoes, onions, peas, coriander etc. The samosa often served with tamarind chutney or curd.Onion samosa, popularly known as Irani samosa is a stuffed pastry and popular in South Asia, Southeast Asia, Central Asia, Arabian Peninsula, Southwest Asia, North and South Africa. It is generally fried in triangular shape with a savory filling. The stuffing includes the potatoes, onions, peas, coriander etc. The samosa often served with tamarind chutney or curd.

Ingredients
1 cup Atta (Wheat Flour)
1/2 tsp chatmasala.
1 tsp chilli powder
1 bunch coriander leaves
1/2 tsp cumin powder
3 number green chillis
1 cup maida
to fry Oil
1 cup onions
1 cup poha
as needed 0 salt
as needed 0 water
Directions
● Take a bowl add maida,atta,salt, 1 tsp oil mix well then add water to make a soft dough rest it for 10min.
● Now in another bowl,take onions chopped,poha,chilli powder,cumin powder,green chillis chopped,oriander ,chat masala mix well.
● In a small bowl add 1tsp of maida mix with some water and make a paste keep a side.
● Now take the dough make a thin chapaties and take a pan slightly cook the chapatis both the sides do not cook more.
● Once chapaties are ready cut the chapati sheets into long triangle shape.
● Now apply maida paste one side of the sheet make a cone shape stuff the mixture in the cone then close the edge.
● In a pan add oil to deep fry, first half fry and remove then after 5min fry again till golden colour

I remember when I was in Vizag, I used to eat these onion samosas everyday after school but after our family moved up north, I never saw these again. So, thank you chef for bringing back a little piece of my childhood. Now I can make them myself and enjoy it.

@orchidGal16 that is not white rice...its aval.....I dunno it is available in our country.... Its available in india.....but if u r from singapore,mlaysia or US , UK u will probably get this aval from Indian grocery store....

Hi chef, I made the irani onion samosas for a party following your recipe verbatim. I did a trial batch of 6 samosas a few days before the party and that was a success. I was worried if the raw onion filling would get cooked while frying. It got cooked nicely after frying and tasted so yumm! The only tip I have is that do fry the samosas twice;makes all the difference in the crispy shell. At the party, they were loved by one and all, the one dish that just flew off the table. Thanks a ton, chef!

@jollyjane08 Now that I have tried it -a warning to everyone DONT even think of wasting your time with this. Thankfully I was heating oil in my kadhai anyways for making kadhi pakode otherwise it'd have meant nothing to eat at home. I wated an hour to turn up with thick chapatis. I had to fry the pohe and onion mixture otherwise it tasted like eating mud -how in the world can we use unwashed thick poha! I have lost all faith on this guy and am back to my fav Sanjeev K.

Do you know why they call it Iranian samosa? I'm an Iranian but our samosas don't look like this at all... Our samosas are much bigger and we get a hot sauce to go with it too... And for the stuffing, we use ground beef, potato and onions and some Iranian spices.

Roozbeh Farhadi this is the Indian vegetarian version inspired to Iranian samosas I guess. :D I don't know about Iranian samosas and sometimes I prepared Indian ones . I will research . thanks for make me notice this difference. greetings from Germany

thanks guys for explain me! :D I didn't know at all about those things. and ...I prepared those samosas today. I have to learn how to make it by triangle shape. I am agree...it seems easy but is not above all if u make it with dough u prepare by urself. ahahah next time I will try with phillo dough,this one used for baklava :D I hope it will work . anyway I will try with meat next time? but no idea about which kind.

thanks a lot for sharing this recipe.my husband used to bring these from some south indian hotel when we were in sharjah.we never knew the correct name so i could not find the recipe.here i don't get to eat these yummy samosas.i was kind of missing eating them.i tried your recipe and it turned out exactly the way it tasted back in sharjah.and the shape n size are also is just the same.thanks again.:-)

Your presentation is excellent Suggestion: When you eat the prepared items at the end, if you can call your crew (cameraman and others) to join with you to eat would be great. I have learned and tried badhusha, pesarattu, wada (gaarelu), and irani samosa and they all came out excellent. Hello Sanjaygaru, I love your receipes..and i tried your many of your receipes and I love to try your receipes and I have learnt so many tips and tricks from you..Thank you very very much for your passion for cooking and the interest in inspiring others to cook...I tried this samosa today and it was amazing just reminded me and my hubby of hyderabad chotey samosa...It was a wonderful time the cold weather in Chicago,fire place,chai and chotey samosa...on a lovely weekend thank you once again...

+Tulika Karmakar I am not sure if you have been to Hyderabad but these samosas are very small in size and flat compared to the regular samosas. I would say 2 regular samosas would equal to 6 onion samosa.

Oh, I know how to prepare the filling. Even if I didn't know, I can still guess by just looking at the list of ingredients. As I said, I tried to provide this suggestion under "review" in that web page, but my suggestion did not get displayed. I was talking about the people who have been waiting from Nov 2007, etc. Maybe they don't know this thing. It would be good to give them this same information. But thanks all the same.

I checked out your site. Had a look at the aloo paratha recipe. It does not explain how the aloo filling is prepared; only lists the ingredients. People have commented since 2007 that this is missing, but looks like nothing was done. I tried twice to provide the preparation method, but it did not display though the message said it was updated successfully. The pages on the site also take a very long time to open. I am surprised that you neglect your site like this and yet recommend it here.

That is very nice. I love this kind of onion samosa. Hadn't realised it was so easy to make. Will definitely try it soon. I noticed you didn't add salt to the stuffing. I think it would need salt for taste. Also, a bit unclear regarding heating the roti after rolling. Did you say heat one side only or both sides? That part was a bit vague. But thanks for the recipe anyway. Will figure it out myself.

I am hyderabadi and tell u I tried a lot to get the recipe of small samosa but in vein. Thanks a lot for your efforts really appreciate a lot. thanks for leaking the recipe of highly popular small samosa's . In hyderabad small samosa's are easily available every where but as I like cooking would definitely want to try this out.

in Bahrain there is a stand that serves samosa along with a red tany and bit thick sauce slightly spicy. Sometime you see chick peas in it. Do u what it is and how to make it I searched the whole web for it, do you think you might knbow what I am talking about and can you post a similar dish. thanks a lot

@choorijamadar ~poha is a factory made indian igredient made from popping, then flattening rice. ~all purpose wheat flour is white and known as maida in indian cooking (it is used in naan, bature, white bread, cake, etc) ~ whole grain whear flour is a little brownish and has more wheat fiber, called aatta in indian cooking (it is used for making chapati, puri, parathas etc.)

The filling for aloo paratha is not complicated. Just mash boiled potatoes with some finely chopped onions, coriander leaves, green chillies, salt, coriander powder/garam masala, and red chilli powder. You can choose to add this filling as is in the paratha or slightly cook the filling, cool it and then make your parathas. Hope this helps.

I can't get pressed rice where I live. If it's just to absorb the moisture from the onions, do you think I could use rice flour instead, or would the texture and taste be all wrong?

tried them did taste good at all, my husband hated them, stuffing inside the samosa is bad, but used very less oil than regular samosas... i fried the onions like I do, for the curry (dont add poha) add all the items specified like chat masalaand everything - they tasted good after lot of variation.

God indian food is the most delicious cuisine on Earth. I never tried it growing up, but once I tasted it as an adult I was HOOKED. There is this indian lady who lives in my neighborhood who is divorced. I help her with her yard work and she cooks for me. So delicious...

ingrdients are:\ for dough 1 cup wheat flour 1 cup all purpose flour some salt for filling: onions pressd rice(substitute can b potato shavings) chilli pwd(sub cayne pepper) cumin pwd chopped green chillies fresh coriander leaves and lemon juice hope it helps..

It's beaten rice...not octopus flour :). You can get it on amazon if you search for "poha" (it wouldn't let me post the link...). You can do so many tasty things with poha. "Maida" is the Hindi word for bleached/white flour or, all-purpose flour.

Very pleasant cook but he lucks on English vocabulary;working for half English and half Indian is not working for me all ingredients should be in oz. and cups and in English if you want other cultures to make your delicious cooking or baking.

sanjay i made the onion samosas and it came out amazing...since i did not have pressed rice(poha) i used potato powder(potato flakes) which also soaks water from the onions and it came out wonderful...thanks for ur recipes

@IrtzaChaudhry powa is cooked puffed rice. you can buy it at any indian/pakistani grocery store. It's usually flattened, and you can reconstitute it by soaking it in water.

Poha is pressed rice. You get two varieties of poha. thick and thin flakes ones. for this recipe you can use thin ones.You can get it in any indian grocery stores.

@IrtzaChaudhry It is Poha not powa.... Flattened rice (also called beaten rice) is a dehusked rice which is flattened into flat light dry flakes... wikipedia.

It's called atukulu or poha. It's rice that has been pressed and dried into flakes. The closest western equivalent I can think of is potato flakes.

@chamboubou19 hey, he added 1cup of wheat flour, 1cup of all purpose flour, 1table spoon oil, and then salt... i hope that's helpful.

@tanhababe it is called POHA in hindi or flattened rice in english. u get it in any indian store.he has used the thin variety of poha.

@19tb87 I think he might have meant whole grain (brown) flour as well as white flour, since it's a common mixture when making rotis.

the other ingredient is beaten rice. Also called "poha" or "avalakki" and you should be able to find it easily in Indian stores.

1 cup wheat flour and 1 cup all purpose flour which is also called as maida, u can get in indian grocery.. hope u are clear now
