'Opakapaka is a popular fish during the holidays here in Hawaii. Mostly a lot of recipes for 'Opakapaka tend to be steamed fish. Yes, most certainly there are many great videos out there for that. But this video's intention was to put a spotlight on the fish's flavorful use in creating dashi. More specifically; ara dashi. The use of its head and bones creates a sweet umami flavor from this deep seven bottom fish. This is a simple fish soup that I hope you can make and enjoy!
